Ingredients
- ¼ cup packed brown sugar
- 3 tablespoons maple syrup
- 2 tablespoons vegetable oil
- ½ teaspoon salt
- 1 ½ cups rolled oats
- ½ cup chopped almonds
- ½ cup raw pumpkin seeds
- ⅓ cup shredded coconut
- ½ cup dried currants
Instructions
- Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with a silicone liner.
- Combine brown sugar, maple syrup, oil, and salt in a bowl. Add oats, almonds, pumpkin seeds, and coconut. Mix well until all ingredients are evenly coated.
- Pour mixture onto the prepared baking sheet and distribute in an even layer.
- Bake in the preheated oven, lightly stirring every 10 to 15 minutes with the tines of a fork, until evenly toasted and golden brown, about 1 hour.
- Remove from the oven. Transfer hot granola into a large bowl and mix in currants. Let cool to room temperature, about 30 minutes.

We love it. I have followed this recipe for years. While cooling, I add about 1/3 cup of dark chocolate chips and it makes clumps. I double the recipe because it’s so delicious. I do cut back on the sugar and use real maple syrup.

This is one of our favorite recipes. I make it at least weekly. My only change is to use walnuts instead of pumpkin seeds. I also use a different variety of dried fruits each time. We love it with yogurt and fruit. Thanks Chef John!
This is good as a cereal. It’s not a true Granola. He really should call it Granola cereal. I use this when I want a cereal and follow it nearly exactly. When I want a chunky snacking granola I nearly double the wet ingredients (I also use honey, depending on whats in the pantry.) I only toss/turn it once in the oven, then leave in the oven 20 mins (open and off) then break apart. Great for snacking.

Delicious! Like a crumbled cookie. And so much cheaper than buying granola! This recipe came out a little on the sweet side for my taste so I’ll just be using a bit less sugar next time. I’m excited to make granola for everyone now. Maybe holiday presents!
I make this for the family, multiplying the recipe by 6 to make enough for about 2 weeks’ breakfasts for hubby and teens. I make it 100% according to the recipe, and it never lasts in the house!
Yummy! Good stuff! I used unsweetened coconut and golden raisins to try to keep the sugar down and it was still plenty sweet! Whole family ENJOYED this recipe!
Wonderful, not too sweet. Used pumpkin seeds, sunflower seeds, walnuts (didn’t have almonds), used raisins (next time will likely double raisins or add cranberries too). omitted coconut. Family loved it. Used as a snack, mixed with yogurt and topped ice cream with it.

If you do not have maple syrup you can you can substitute it with honey.

I love this granola recipe and will never buy again. Weening my husband off cakes and pies seemed impossible until I found Chef John. Yogurt parfaits fill the need for him. Go figure. I changed out vegetable oil for coconut oil. You can put almost anything in this. I’ve used fake syrup and real syrup. Both tasty. I make two batches every week. Thank you, Chef John for sharing this recipe. You could be a life saver!! UPDATE: since my original posting in October, I have made 2 batches every single week. This is hands down the best granola recipe.
My favorite granola. I start with Chef John’s recipe then I add any nuts, cereal or dried coconut I want to get rid of. Everyone loves it!
This granola is delicious and super-easy to make. And it’s pretty economical, too, if you buy from the bulk foods section of the supermarket (I think the coconut cost me 22 cents).
