Ingredients
- 1 (9 inch) pie crust pastry
- ½ (8 ounce) package cream cheese
- ½ cup milk
- 4 eggs, beaten
- 8 ounces sharp Cheddar cheese, shredded
- 10 ounces chopped kale
- 4 slices cooked bacon, crumbled
Instructions
- Preheat oven to 400 degrees F (200 degrees C). Press pie crust into a pie plate.
- Place cream cheese in a microwave-safe bowl; heat in microwave until warmed, about 10 seconds. Stir cream cheese and milk together in a bowl; stir into beaten eggs. Stir Cheddar cheese into egg mixture; add kale and bacon. Pour egg mixture into the pie crust.
- Bake in the preheated oven until top has golden brown spots and a toothpick inserted in the center comes out clean, about 45 minutes.

Tried lots of quiche recipes over the years and this is the best! The cream cheese and cheddar are excellent with all the fresh kale from my garden. Made this twice and both times have had consistent results.
I was skeptical about putting raw kale directly into the piecrust but it worked great. I did, however, only fit 4 oz of fresh chopped kale. I used a Mexican blend instead of cheddar and omitted the bacon. Super easy – will make again.
This a delicious recipe and the first quiche I’ve made! I made it super close to the way it’s written and it was perfect. I soaked the kale in water, before rinsing it and drying it – also chose white sharp cheddar instead of yellow. It’s wonderful and my family loved it!

My family just devoured it. I used a Mexican blend instead of cheddar and half of the kale (10 oz would not fit! Maybe my kale variety is lighter? Not sure).
I weighed out the kale and after mixing it into the rest of the ingredients, I realized something was wrong. There was so much of the mixture, that I had to double the cream cheese, milk, eggs, cheese and bacon to make it look even close to being quiche-like. I’m not sure exactly how much kale there’s supposed to be, and reading the other reviews wasn’t helpful. The quiches did turn out very yummy and I had plenty for several days. I’ll definitely make this again, but place about 1/2 of the kale in it. LOL
As a long time quiche maker, I sauteed 2 cloves of garlic & onion with the kale & added broccoli florets. Use the same amount of cheese blended, 1/2 swiss & 1/2 cheddar. A dash of hot sauce & 1/8 tsp nutmeg ( it highlights the blend of cheeses with the egg). Fantastic! I had just fried some bacon & wilted the greens in the grease, when I came upon this recipe, WHAT LUCK!
Delicious! Nearly doubled the kale and it was no problem. I did take another reviewer’s suggestion and steamed it quickly (in the microwave) before placing it in the crust- then mixed and added the other ingredients on top. Big hit!
Loved this! I added 1/2 a diced onions and sauted them with the chopped kale first in olive oil, then I put that mixture through my food processor. I also used a few different types of cheeses (Swiss and Mexican Blend). We all loved this recipe.
I had a taste for a quick and easy quiche. I kale, as I am not a spinach fan, and decided to give it a try. I didn’t have any cream cheese, so I substituted it with 1/4 cup of heavy cream. Added some finely chopped onion and bacon pieces. A little personal seasonal I like and put it all together. Waalah, it came out fantastic. May even try a phyllo dough crust. Great recipe! I used Neufchatel instead of cream cheese and skipped the bacon. I only had buttermilk on hand, so I used a quarter cup buttermilk and a quarter cup water. Turned out very well! Will definitely make this again.
The only thing I did differently was Saute the kale until it wilted. I was worried it would all fit, there was a lot of kale. It came out amazing!! We all loved it. Great use for my home grown kale. Thank you!
This was really good! Only changes I made was I omitted the bacon and added 1 chopped Leek. My husband and kids really loved it and it was super easy to make.
this came out awesome! i changed a few things. im a vegetarian so no bacon, added chopped onion and garlic, mixed Swiss cheese with cheddar and used 1/4C heavy cream instead of milk. also make sure to cover crust edges with foil so it doesn’t brown too much. great recipe amd great idea for the cream cheese!!
