In essence, eggs are layered on top of cheese, which is layered on top of cheese, which is layered on top of eggs, creating a delightful mixture of eggs, cheese, and flour. Add a small can of diced chilies or jalapenos to the mixture for an added spice. Serve with salsa, green taco sauce, and sour cream.

Reviews
bland even though I added tomatoes and spinach and spices – topped it with some salsa and was much better
Really good, really easy.
An excellent base. Like a perfect canvas. I added a few dashes of garlic powder, cumin, cayenne, and parsley as well as a diced up habanero and a drained can of corn. The 1 hour bake time was still perfect, even with all the extra ingredients. This is begging for some bacon to get tossed in there.
My whole family loved this. I did use marble jack instead of pepper jack or my mom would think it was “too spicy”. (She thinks ketchup is a spice-so there’s that) I made a whole lot less because there are only 3 of us, and 12 eggs seemed like way too much. I’m new to cooking, but I think I got the measurements right. Super easy!
Such and easy and fast way to make a morning breakfast treat that can last all week. The second time around I added 8oz diced ham ham and 8oz frozen broccoli.
This cooked up so well! And so easy! Halved but used 7 eggs because I also sautéd half a red onion and some fresh spinach. Wish I had some green chiles! Will add next time. Cooked up in 45 min and let sit for 5 minutes before cutting into slices. This is very customizable and plan to make again for an upcoming Palm Sunday brunch. Thanks Hammertime!
This was a great recipe we added diced ham to make a perfect dinner. My kids loved it. No leftovers which is awesome. Some many things you can add to make it your own and different every time.
I made it as-is and it was delicious, but very rich/heavy/fatty (and a little bland). The second time around, I used half the cheese, and used low-fat cottage cheese. To reduce the water, I drained the cottage cheese overnight. For punch, I added 1 small can of chilis (drained), 1 teaspoon each of garlic and onion powder, 1/2 teaspoon of black pepper and red pepper or chili powder. Still satisfying and healthier, with less fat and salt.
Good, added jalapenos and some parmesan, jack cheese instead of pepperjack. Delicious but not exciting, needs to be served with something. Next time will add more veggies.
Easy delicious recipe! Family favorite for Sunday morning brunch. Topping it with salsa gives it an extra kick.
Simple, quick frittata – when I cut it down to 3 servings, sautéed some peppers, onions and tomatoes in a cast iron pan, then add the egg mixture, cover for a few minutes, and it’s done, no oven needed
I made this today and it was easy. I made the basic recipe and it was good, I think it would be good with a little sauce or sautéed vegetables and maybe kielbasa or other meat
I added some sliced carrots and used vegetable oil cooking spray to prep the baking dish as I didn’t have a way to brush on any melted butter. I baked for a full hour and the eggs browned nicely to form a crust. Delicious and a good way to get my oldest to eat some eggs.
I made this for Christmas day brunch what a hit i used a small curd cottage cheese and added spinach I took the advice of one of our commenters and did not add salt and it really didn’t need it. We loved it
Love this recipe! I check it after 45 min in the oven because an hour is too long. I’m doing the low carb thing; so after the first time I made this, I gradually reduced the flour. These days I don’t use any flour at all, and it still comes out great. You can add veggies and meat (pre-cooked). My favorite add-ins are spinach and turkey sausage.
This was awesome! A tiny bit salty for my taste so next time I’ll reduce to 1/2 tsp. Delicious! Our family gobbled it up.
I love this egg casserole! I make it just like the recipe. I have also used other cheeses to make it for small kids. This is a keeper!
Family loved the eggs.
Halved recipe and baked in pie dish using Kraft Triple Cheddar shredded cheese and added 1/2 tsp baking powder black pepper. Accidentally mixed butter into ingredients (pulsed everything together in blender) and still turned it great!
This was so easy and yummy! I just dumped all the ingredients in a big mixing bowl and mixed altogether before putting it in the oven. All my family ate up the whole thing in one sitting. Just with shredded mix cheese from Costco and whatever leftover cream cheese, it was so good. Hubby even thought that i had put expensive Gouda in. I recommend using whatever meat you have, just chopped fine and mixed in if you can. I will definitely make again.
Good served with salsa.
