This substantial breakfast brownie is tasty, easy to prepare, and filling. My children adored it! Additionally, it is free of dairy and gluten.

Ingredients

  1. 1 ½ cups quick-cooking oats
  2. ¾ cup brown sugar
  3. ¾ cup flax seed meal
  4. ½ cup gluten-free all purpose baking flour
  5. 1 teaspoon baking powder
  6. ½ teaspoon ground cinnamon
  7. ¼ teaspoon salt
  8. 1 banana, mashed
  9. ¼ cup rice milk
  10. 1 egg
  11. 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8×10-inch baking pan.
  2. Mix oats, brown sugar, flax seed meal, flour, baking powder, cinnamon, and salt together in a bowl. Mix banana, rice milk, egg, and vanilla extract together in a separate bowl. Pour banana mixture into flour mixture; stir to combine. Pour batter into the prepared baking pan.
  3. Bake brownies in the preheated oven until a toothpick inserted in the center comes out clean, about 20 minutes. Cover pan with a towel to hold in moisture and cool brownies for at least 5 minutes before serving.

Great healthy recipe for adults and children. I made a batch for my GB (grand baby) who is 2.5 years old and he loved them. I am really bad about eating breakfast myself, so these are great for me to keep at work and snack on at my desk in the morning or anytime hunger strikes. They freeze well and you can take out whatever portion you need for the day. I used 30 Cal unsweetened Almond Milk instead of the rice milk.

I love these bars! At first they seems a bit runny before baking, but afterwards they were a nice chewy bar. Very easy to make and very filling. Great breakfast treat on the go! I will make these again!

There is nothing wrong with this recipe. The flavor and texture were fine, nothing special. The main issue is just that I have had far better oatmeal based breakfast bars/casseroles/cookies, and so I will not be making this recipe again.

I’m a fan of oatmeal and made this recipe today with the following modifications (using what I had) –9×9 pan, regular flour, almond milk. Added raisins chopped walnuts and unsweetened coconut and an extra egg because of these additional ingredients. mixed it up popped it in the oven and cooked the recommended length of time. Removed it, covered it, etc. Turned out very moist and chewy. Not overly sweet. Though my banana could have been riper, the flavor came through. Will make this again.

I thought this recipe was fantastic! Everyone loved them in my house. These make a nice substantial snack when on the go. I did as others suggested and added a cup of peanut butter and a quarter cup of chocolate chips. I think viewers have just been thrown by the name. Perhaps they are called “brownies” because of their shape and the same way they are made in a pan. Maybe a better name would be “breakfast bars”.

I just made these this afternoon. It was so good! I read one of the reviews that said she added peanut butter. That sounded good, so I added half a cup of natural peanut butter which went well with the banana flavour. They’ll be great for breakfast on the go. Thanks for posting this recipe!

I added chocolate powder and switched bananas for peaches and pecans. Then I grated almond bark across the top before putting it into oven. Texture was fine and taste excellent.

I agree with HMG. I also did the buttermilk and was thinking I should’ve added nuts and maybe cranberries because the banana was the only thing that stood out, and we love banana. My kids (14-25)didn’t eat them so thankfully not an overwhelming amount to eat and handed some to friends. It was something to try but I too will not be making it again.

Yes,he first time we made these “brownies” (Can we not come up with a better, more appropriate name for a recipe that does not include chocolate?), they were not popular with the munchkins. Not a good sign. “Dry” was the common complaint. Next time will use all purpose flour, regular cow’s milk, and forego the flax seed meal.

I’m a bit perplexed as to how these are called ‘brownies’ when there’s not an ounce of chocolate in them? Nevertheless, they are pretty tasty breakfast bars! I only used 1/2 cup flax meal, and replaced the brown sugar with maple syrup. I also threw in some walnuts and raisins, because why not? I baked the bars in 9×9 pan and they came out beautifully–and only needed 20 minutes to bake. I do feel like these bars could use an added fat of some kind to boost the flavor–maybe a touch of oil, some whole milk Greek yogurt, or almond butter would be good. I also want to try these again with the other reviewers’ suggestion of a 1/2 cup cocoa powder to make them more “brownie-ish.” Otherwise, they’re a great grab-and-go breakfast bar! This recipe is a good idea but it needs a bit of tweaking. My mom and I make our own versions; she uses two ripe bananas and I use 3/4 c unsweetened applesauce

I tried a different “healthy” recipe that turned out rubbery! I thought I’d try this one because it added baking powder and all purpose flour. I added 1/4 cup cocoa powder, and a handful of chocolate chips. I used a 1/2 cup of flaxseed meal because it was all I had; will try the full amount next time. I accidentally added a cup of almond milk instead of a1/4 rice milk, and I like how they turned out! The banana was overpowering, so next time I will use 1/2 cup unsweetened applesauce.

I have made this several times and sometimes used applesauce in place of banana 1/3 cup. Also added at different times choc chips, nuts, raisins, and soy instead of rice milk. I love them husband is just so so, however he has them one a day at least. Thanks

These have become a staple in my house. I usually make 3 batches and personalize them for people. I take out the oats and use crushed bran flakes for my youngest because she hates oats. Perfect for my oldest who’s a T1D kid.
