This oatmeal substitute pairs sharp lemon with sweet blueberries. Quinoa is a fantastic way to start the day because it is high in protein and fiber. I came up with this one morning when I was wanting quinoa and wanted something different from the norm. Add more milk on top for a thinner consistency. Also tasty with a dash of nutmeg or cinnamon.

Ingredients
- 1 cup quinoa
- 2 cups nonfat milk
- 1 pinch salt
- 3 tablespoons maple syrup
- ½ lemon, zested
- 1 cup blueberries
- 2 teaspoons flax seed
Instructions
- Rinse quinoa in a fine strainer with cold water to remove bitterness until water runs clear and is no longer frothy.
- Heat milk in a saucepan over medium heat until warm, 2 to 3 minutes. Stir quinoa and salt into the milk; simmer over medium-low heat until much of the liquid has been absorbed, about 20 minutes. Remove saucepan from heat. Stir maple syrup and lemon zest into the quinoa mixture. Gently fold blueberries into the mixture.
- Divide quinoa mixture between 2 bowls; top each with 1 teaspoon flax seed to serve.

This is DELICIOUS and ready in 5 minutes using leftover quinoa. (Whenever I make quinoa, I make a big batch and refrigerate or freeze it to pull out for so many uses). The recipe is perfect as written. I added sliced almonds and a splash of milk. The lemon, blueberries and maple syrup combine in a flavor delight far beyond the effort involved.
I made this, but I think I might have cooked the quinoa too long. I only used 1 tbsp of maple syrup and added extra blueberries. I will try this again, but quinoa is not my favorite.

No. Quinoa is great for salads, sides etc. Sweet version…for breakfast, no. Texture is all wrong. Our family is open minded and eats almost exclusively healthy foods. So we ate most of this. But not a keeper.
I subbed almond milk and served it as written and I didn’t care for it much. I added a little more sweetener and milk and put the rest in the fridge. The next day I added some cinnamon and cardamom and ate it cold without the blueberries and I loved it!
I added coconut milk, walnuts and chia seeds. Subbed the maple syrup for honey. It was amazing!!!
Used zest of a whole lemon, unsweetened vanilla almond milk, pure maple syrup, added 2 packets of Splenda and very good flavor. 3 servings 10 pt each, could consider using sugar free syrup for around 7 each. I do wish it was thicker but that’s just the nature of quinoa
This is my first time cooking and eating quinoa. This was a good recipe. I did change some things. I cleaned the grains for 15 minutes in a strainer. Then I toasted the grains with 2 teaspoons of butter for 15 minutes. I used almond milk to cook the dish and added about 4 teaspoons of organic sugar and chia seeds. To top it off I used cinnamon and french vanilla creamer. Delicious!!!!!
Quick and easy! I made a modified version with almond milk, and agave instead of maple syrup. I topped this with coconut, and walnuts. Delicious, I will be making this again.
I made the recipe as written, using full fat coconut milk. Yum! Next time I’ll throw in some cinnamon to make the blueberry flavor pop even more. Definitely makes 3-4 servings.
This recipe is delicious! My only problem is every time I cook quinoa the liquid tried to boil over, not sure if it’s my stove or the quinoa itself. I have to cover it then take off the lid every few minutes to stir so the liquid goes back down. Besides all that I love the combination of the lemon zest, blueberries, and syrup! I topped with roasted flax seeds so it has a nutty flavor. So good!

This recipe is a great alternative to oat meal. I prepared quinoa as directed and instead of maple syrup and blue berries topped it with trail mix containing dried fruit, nuts and seeds, super yum..
OMG !!! This is delicious. I used Honey instead of the Maple Syrup. (Just not a fan). This is my New Go To for replacing Oatmeal.

The only thing I did differently was use whole milk because that is all I had. This was a great recipe! I made it on a Sunday night and them reheated portions during the week.
