Blueberry Bread I

Simple ingredients for my pulled pork dish include a 5- to 6-pound pork butt, seasonings, and a bottle of barbecue sauce. My preferred brew is Shiner Bock, and Sweet Baby Ray’s is my preferred bbq sauce. Put it in the slow cooker before you go to bed, and when you wake up, magic will have happened. Just have a look! Put the food on hamburger or onion buns.

Ingredients

  1. 2 eggs
  2. 1 cup white sugar
  3. 1 cup milk
  4. 3 tablespoons vegetable oil
  5. 3 cups all-purpose flour
  6. 1 teaspoon salt
  7. 4 teaspoons baking powder
  8. 1 cup fresh blueberries
  9. ½ cup chopped walnuts

Instructions

  1. Mix together beaten eggs with the sugar. Add milk and melted shortening or vegetable oil.
  2. Sift together flour, salt, and baking powder. Combine mixtures, stirring only until blended. Carefully fold in fresh or frozen blueberries and broken walnut pieces.
  3. Pour into greased 5 x 12 inch loaf pan. Bake at 350 degrees F (175 degrees C) for 50-60 minutes. Cool in pan but try to turn it out of pan before it is totally cool. It will be easier to remove. Can also be made in a normal size loaf pan or can be made into 2 pans.

As I was making it I read the reviews, I said to my self “should’ve read this before”. I have to be honest, turned out perfect! Just a bit more in the oven as I used one pan 3” smaller. Toasted the slice the following morning for breakfast with butter…M..m..m delicious. After all this is a bread recipe not muffin nor cake. TY for sharing recipe.

This bread was so bland. I added one teaspoon of vanilla but I wish I would’ve decreased the baking powder, added one more egg, used melted butter instead of vegetable oil, and maybe used 1/2 a cup of white and 1/2 a cup of brown sugars. I might try it again with these changes.

Just made this and it came out amazingly tasty. I added vanilla and a bit or orange zest. Perfect with a cup of joe. Yummy will be making it more often.

While the recipe is easy, that’s the only positive thing I can say. I took suggestions from reviews and used half brown sugar half white and added a teaspoon of vanilla to sweeten it like another reviewer suggested and it’s still pretty bland and a bit dry. I won’t use this recipe again.

This was an easy bread to make. I found it a little dry though, admittedly, I live in a 0 humidity area. I would probably add a little more moisture with a banana or butter next time. Taste was pretty good when I warmed it up and put butter on it. Will keep the recipe and adjust a little

I used frozen organic blueberries. It did effect the recipe one bit! I think it made it better due to the bigger size of the blueberries. I decided not to use glaze. Plain is just find with my tea.

This was my first time making blueberry bread. made this for my mom on mothers day and my whole family enjoyed it! I suggest adding 2 teaspoons of cinnamon and one teaspoon of nutmeg and a tad bit more of white sugar.

I did as others suggested adding tsp cinnamon and tsp vanilla, only used 3/4 cup sugar. Next time will try adding applesauce

I found it quite dry. It was better when I decreased the milk to 3/4 cup then added 1/2 cup sour creme and increased the oil to 1/3 cup, and increased the (fresh) blueberries to 1 1/2 cups.
