Blueberry Banana Breakfast Bars

Ingredients

  1. 1 ⅓ cups rolled oats
  2. ⅓ cup coarsely chopped dried figs
  3. ¼ cup coarsely chopped almonds
  4. ¼ cup sunflower seeds
  5. 1 cup mashed ripe bananas
  6. ⅓ cup smooth peanut butter
  7. 2 tablespoons honey
  8. 2 large egg whites
  9. ⅔ cup fresh blueberries
  10. 1 tablespoon flax seeds
  11. 1 tablespoon sunflower seeds

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch square baking pan with parchment paper, leaving 1 inch of parchment hanging over the sides.
  2. Mix oats, figs, almonds, and 1/4 cup sunflower seeds together in a bowl.
  3. Stir bananas, peanut butter, and honey together in a saucepan over medium-low heat until completely melted and smooth, about 5 minutes. Remove saucepan from heat.
  4. Whisk egg whites together in a bowl until foamy. Mix banana mixture into egg whites and whisk until smooth; add oat mixture and stir until batter well combined. Fold blueberries into batter. Press batter into the prepared pan; top with flax seeds and 1 tablespoon sunflower seeds.
  5. Bake in the preheated oven until golden, about 30 minutes. Cool completely before cutting into bars.

Needs salt! I also think vanilla and molasses would help. Don’t add sunflower seeds to the top, overkill. Served with coffee ice cream otherwise a bit bland.

These are healthy bars but rather bland. The only substitution I made was craisins instead of figs. If I make these again I’ll add some dark chocolate chips.

Needed to be in a larger 9×11 or something as too thick in 8×8 pan for me. Didn’t cook very well in middle and yet outside was done. It didn’t cut but crumble, perhaps I forgot something like peanut butter. Will not make again, was not what I was expecting.

I’ve made these several times and they are delicious! I’m going to make this much easier for you. This is only going to require one bowl. First, I add the oats to the bowl. Then I take the dried figs, almonds, and usually a handful of dried apricots and put them into a food processor and pulse them to chop them up, then that goes into the bowl with the oats and then I add the sunflower seeds. Then I take the bananas, peanut butter, two squirts of honey, and the egg whites and put them into the food processor and process for about five seconds until it’s all liquidy. Then that all goes into the bowl and gently stir it to mix it. I also add a tablespoon of cinnamon to the batter and make sure that that’s mixed in well. That could actually probably be put into the processor with the bananas, eggs, etc. Then I usually take a handful of blueberries and other fruits, like raspberries or blackberries and throw those in. Mix that in, then that all gets put into the lined parchment pan and then the other seeds are sprinkled on top and then bake. I have also at times cut a Macintosh Apple thinly and then pour half the batter into the pan then lay a layer of the apples and then put the rest of the batter on top. It is truly a healthy fruit feast. No need to cook the bananas, peanut butter, honey, and eggs on the stove. I can attest that the bars come out the same using the food processor. Enjoy!

We loved the Breakfast Bars. I added some chia seeds and used a whole egg instead of just the white. They came out perfectly and we’ve been eating them for breakfast ever since. I’ll make a new batch this weekend.

I made the recipe and though I used almond butter instead of peanut butter, I don’t think peanut butter would have changed my rating. The bars are good. I individually wrapped them for easy grab and go snacking.

These seem like they are complicated but they are not, and I assembled them in about 15 minutes. The end result was really tasty breakfast bars. I will switch out the blueberries next time for apples and cinnamon just to try something different. I also didn’t use parchment, I used cooking spray. Also, I didn’t let them cool completely before I cut them, I should have waited.

Well, I didn’t have any blueberries or figs, so I substituted apples and dried cranberries. That may have made the difference between great and good. This could be a great basic recipe, but I think the figs are pretty important. You just need that chewy element. Also, I think they needed a bit more sweetness. I’m not that into sugar, but two tablespoons of honey just didn’t do it for me. Next time I’ll add the figs and blueberries, but also add more honey or maybe some brown rice syrup.

Great as is, if you are looking for a healthy alternative. My husband thought it was bland (Pablum) and tasted too much like peanut butter, while I liked it quite a bit. If you understand that healthy doesn’t mean that it triggers your brain with fat, salt and acid the way processed food or richer foods do, then you will understand what I mean.

This is pretty good and filling. I didnt have blueberries though, i used raspberries instead. Also substituted figs for raisins and also used 1 whole egg instead of 2 whites. It tasted very healthy.

Exactly what I was looking for. Delicious, nutritious, low sugar and easily modifiable. I used fresh organic blueberries that were on sale. Raisins instead of figs, and threw in some no sugar added muesli when I didn’t have enough oats. I also added a pint of blueberries, which I think is more than the recipe called for. Still turned out great. Will be using this as a template for many desserts in the future. Thank you for posting this recipe!

This is dangerously delicious! I substituted dates for figs and cashews for almonds, but it was really, really good! It was a great topping for breakfast yogurt, or snack by itself. I will definitely make these again

So Yummy! I made these for my toddler so I did some things differently. I did not use figs, and I used ground flax feed. I used frozen blueberries because that’s what I had. I also added some chocolate chips on top. They are so delicious! Some one mentioned they made them into muffins, I think I might try them as mini muffins next time!

Used prunes, dried blueberries, whole egg, and grape nuts with my oats and almonds. A little more honey because i like something sweet when i am working out.
