Ingredients
- ⅓ cup peanut butter
- ⅓ cup brown sugar
- 2 ½ tablespoons butter
- 1 egg
- ½ teaspoon vanilla extract
- 1 ripe banana, mashed
- ⅔ cup rolled oats
- ⅓ cup all-purpose flour
- 2 tablespoons wheat germ
- ¼ teaspoon baking soda
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9×9-inch baking pan.
- In a mixing bowl, beat together the peanut butter, brown sugar, and butter with an electric mixer until smooth and fluffy. Beat in the egg and vanilla extract, then the banana. Stir in the oats, flour, wheat germ, and baking soda until completely combined. Spread in prepared baking pan.
- Bake in the preheated oven until set and lightly browned, 20 to 25 minutes. Remove from oven and cool in pan on wire rack before cutting into bars.
- If you are not a banana fan, substitute 1/2 cup of unsweetened applesauce for the banana.
- When I don’t have wheat germ, I use 2 tablespoons flax seed meal.

This was fabulous. I made it with 2 bananas because I love bananas. I also used almond flour because I can’t have gluten and need lower carbs for my husband. We both loved them. I’ll definitely make them again.

This recipe was great. I made according to the recipe but soaked the oats for a few minutes like someone else recommended, added chocolate chips, walnuts and raisins. Was wonderful.
First time with this recipe. I wasn’t sure what to expect, but this worked very well. It turned out as a soft bar, which my wife particularly enjoyed. I added a few blueberries (next time, a bit more), and a bit more flour and oats (quick oats), as my pan was a bit larger. I omitted the wheat germ. I also added some banana liqueur for more liquid, and flavour!!!! Definitely will be made again!
Quick and easy to make. I used Crazy Richard’s creamy peanut butter. We liked them but they seemed to me like they needed something. I will make them again and maybe add dried cranberries or chocolate chips.
They are a wonderful snack I feel good giving to my toddler Granddaugther. I added chocolate chips and probiotic blueberries/cranberries. It was delicious

Although I am only like my banana raw without any other additions, I decided to give it a shot given the other ingredients. I am glad to say I liked it. To make it more whole grain, I substituted the all purpose flour with whole wheat. I will make this again. They are just perfect for a breakfast on the go, but I will try them next time with apple sauce and flax seed as I like both! Very good recipe thanks for sharing.

Easy and tasty
Not bad, I agree they need more. I will try adding raisins or dried cranberries next time. Easy to make, and provide a quick, easy To grab and go, nutritional breakfast.
These are light and delicious! Will definitely make them again. And mine actually turned out like the picture!
Added pecans and cinnamon and a pinch of salt, Not a lot of banana flavor, so I would increase the banana next time. Also made it in a non stick baking pan without greasing and the bar came out of the pan with beautifully!
Added walnuts and 2/3 cup quinoa to get some more protein for my morning break. Some walnuts on top too.
It was simple to follow and quick. I also added craisins.
These are very soft, but have a weird texture because the oats stay kind of chunky in them. The taste is rather bland with neither the banana nor the peanut butter giving it much flavor. They aren’t very sweet. I should have listened to reviews and added something like raisins or nuts, etc. They were quick and easy to put together.
Delicious! My husband and I have them as a mid-morning snack. Very satisfying . I bake them in a square muffin pan. And double the recipe??
I made these as muffins (9-10) in the toaster oven to avoid adding the heat of the oven to the house! I made essentially as is but didn’t have wheat germ so added ground ancient grains. I used natural peanut butter and also went with whole wheat flour, and added some ground nuts and cinnamon. I still found it a tad bland, so next time I will try adding chopped dates.
I didn’t have wheat germ so I added a bit more oats. They were moist and yummy!
