Ingredients

  1. 3 large eggs
  2. 1 cup sifted all-purpose flour
  3. ½ cup milk
  4. 3 tablespoons baking powder
  5. 2 tablespoons vegetable oil
  6. 2 large ripe bananas, mashed
  7. 1 ripe banana, sliced
  8. ¾ cup maple syrup, warmed, or to taste

Instructions

  1. Preheat a griddle to medium heat.
  2. Beat eggs in a mixing bowl until frothy, about 2 minutes. Add flour, milk, baking powder, and vegetable oil to the eggs and mix to make a batter. Stir mashed bananas into the batter.
  3. Ladle batter in 1/4 cup portions onto the hot griddle. Cook until tiny air bubbles form on top, 2 to 5 minutes; turn and continue cooking until the bottoms are browned, 2 to 3 minutes. Repeat with remaining batter. Keep finished pancakes warm. Top pancakes with banana slices and maple syrup to serve.

These would have been 5 stars had they had a little more flavor. I plan on adding a little vanilla to the batter next time to help that. However, I substituted the all purpose flour for self rising flour and omitted the baking powder altogether and they turned out great. I even added some chopped walnuts to the batter and served them with a choice of chocolate syrup or regular. My kids went nuts over them! I will be making these again with the exception of adding vanilla next time. Thank you!

Just made and had them. I guess the amount of baking powder mentioned is by mistake so I used teaspoons instead of tablespoons. I pureed the banana separately in a blender. Then user a electric blender to blend the 3 eggs, mixed all ingredients together. The texture was amazing. The only issues is that it tasted a little bitter. I guess coz of the baking powder. Next time only 1.5 teaspoons of baking powder goes in. My toddler didn’t like it though.

These pancakes were very delicious and were enjoyed by all of my children. Instead of (yuck) vegetable oil, I used clarified butter (ghee) instead. I didn’t use a griddle and cut down the cooking time dramatically though I did have to pay more attention in order to keep from burning. I will be preparing these again!

I tried these because I had ripe bananas I wanted to use. If you make them exactly as the recipe says (which I always dio the first time) these are terrible. I’m very sorry to say. WAY too much baking powder, not enough flavour. I’m not sure if there is enough tweaking to fix these. If you must, use way less baking soda, add brown sugar (or any sugar) and 1-2 more bananas wouldn’t hurt.

These pancakes were fantastic! So fluffy! The only changes I made were 2 Tbsp of oil instead of 3 and 1 large ripe banana instead of 2 (hubby not a huge banana fan). This recipe was so easy and made 9 good size pancakes. We both really enjoyed them! Thank you.

Quick, easy, and delicious. The only thing I do differently is to mix the batter the night before and let it marinade in the fridge overnight for a more infused banana flavor throughout the pancake.

This was disgusting, my mum told me not to put 3 table spoons but instead 3 tea spoons of baking powder. They turned out terrible they didn’t even stick.

Inedible. 3 TABLEspoons of baking powder is WAY too much. Would not recommend this recipe and would not make again.
