Banana Egg Waffles

This pie has a milk base, eggs, vanilla, and phyllo dough; it is of Greek origin. Then cinnamon and icing sugar are used to adorn it.

Ingredients

  1. cooking spray
  2. 6 eggs, beaten
  3. 3 bananas, mashed
  4. ½ teaspoon vanilla extract
  5. ½ cup peanut butter, melted
  6. 1 cup oats (Optional)
  7. ½ cup chocolate chips (Optional)

Instructions

  1. Preheat a waffle iron according to manufacturer’s instructions and prepare surfaces with cooking spray.
  2. Whisk eggs, bananas, and vanilla extract together in a large bowl until smooth. Stir peanut butter into the egg mixture until smooth. Fold oats and chocolate chips through the egg mixture.
  3. Cook batter on waffle iron according to manufacturer’s instructions until golden brown, about 3 minutes.

Kids loved it but I did make changes. I made this recipe three times in about a week. I fast ripened the bananas in the oven for 15-20 at 300 until black. Also, I did 6 bananas (with a large waffle maker wouldn’t make much otherwise), 1/2 cup butter instead of peanut butter, 3/4 tbsp baking powder, used the 1 cup oatmeal, and rough 1/3 to 1/2 cup sugar. I did this the first two times and it was delicious, kids were full after 1 8inch waffle (lol that usually never happens), and it didn’t stick much or make a big mess! They did sometimes split along the seams but stayed together for the most part. But the last time was the worst and messiest to clean, and it stuck to the waffle maker really bad. I did not oven ripen the bananas this time; It seemed like the bananas that weren’t oven fast ripened were stickier. I did not add regular sugar, kids still enjoyed them, but the liquid coming out during cooking was crystalizing and burning and sticking to the waffle maker. So I love the recipe but will definitely always oven ripen the bananas beforehand now.

I added extra peanut butter per my daughter’s request after trying one and thinking the pb flavor was too subtle. My pickiest kid ate these up! Great way to use up some overripe bananas.

Loved these. Made a couple of tweaks. Added cinnamon and about 1/4 teaspoon of baking powder for little more froth. I also didnt have peanut butter so added about 1 tbsp of coconut oil and a handful of peanuts. Worked out great. Topped them with some fresh blueberries.

Wowww, these were really very good – especially the texture! I thought it’d be mush, but they weren’t overly soft at all and even had a fluff to them. We served them right away as they came out and the whole batch was devoured by 3 hungry littles – so each ate a banana and 1.5 eggs, plus 1/3 cup oatmeal with a drizzle of real maple syrup. YES. Let the day begin! haha

I used non stick spray in my waffle Iron. Batter is seriously stuck going to have to soak. I tried to make these for my hubby’s birthday breakfast. They worked as pancakes. The flavour was great.

Followed the recipe did not put in the optional chocolate chips but instead put Nutella on top and whipping cream and raspberries. Excellent taste. Perfect for gluten free.

I halved the recipe and it perfectly made one round of waffles in my waffle iron (Cuisinart 4 square waffle) I added the oats and chocolate chips as suggested and they turned out great! just sweet enough and the oats added a nice texture. They held together as well as any traditional waffle recipe I have made. We will definitely make these again.

These were tasty and I appreciated the simple ingredients and the fact that there’s no sugar added, yet the bananas give them a gentle sweetness. Mine didn’t hold together particularly well, but I did use some extra banana and didn’t have cooking spray on hand so I greased the waffle iron with oil on a pice of paper towel. Both factors could have contributed to the crumbliness. I may or may not try making them again, but it was a fun kitchen adventure!

We have been desperate for a great gluten free waffle recipe..and boy is this one! We were skeptical in the beginning but amazed at how awesome they came out WITHOUT any flour!! WE used the oats and banana granola nut peanut butter..incredible!! Thanks so much

I only had one banana, so I substituted with 1c apple sauce. I included oats and chocolate chips and they turned out great. The whole waffle didn’t hold together, but each I the quarters did. Next time, though, I won’t include choc. chips because it took 15-20 minutes to clean the melted chocolate off the waffle maker. I might also add walnuts next time.
