Ingredients
- 2 cups all-purpose baking mix
- 1 ⅓ cups milk
- 2 tablespoons white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 banana, chopped
- ½ cup miniature semisweet chocolate chips
Instructions
- Stir baking mix, milk, sugar, egg, and vanilla extract together in a bowl until batter is smooth; fold in banana and chocolate chips until just combined.
- Heat a non-stick pan over medium-high heat. Sprinkle a few drops water in skillet; they will dance and disappear when skillet is ready.
- Spoon just under 1/4 cup batter into the pan; cook until bubbles appear on the top of each pancake and bottom is golden brown, 3 to 4 minutes. Flip each pancake and cook until bottom is golden brown, 3 to 4 minutes. Repeat with remaining batter.
- You could also add 1/3 cup unsweetened baking cocoa powder for a more chocolaty taste.

The texture of these pancakes was rubbery. It needs baking soda, baking powder and some oil.

These were delicious. The batter turned out a little thick so added a little more milk and all was good! Added some homemade peanut butter syrup and it was one of the most delicious breakfasts I have ever had!
My kids and I LOVED these!! I had to add a little extra milk to thin the batter a bit, but other than that, SOOOOOO yummy!!

It has a weird texture I wouldn’t recommend it.
I used soured milk and a homemade white-whole wheat all purpose mix in this recipe. I chose not to fold the bananas or chocolate chips in, instead I sprinkled a little over each pancake mound on the griddle. I did not try this myself–my kids said they were really good, though. NOTE: Keep in mind that if you do like I did and use a whole wheat flour in this recipe, you may need to increase the milk a touch.
