Ingredients

  1. 3 cups rolled oats
  2. 1 cup brown sugar
  3. 2 teaspoons ground cinnamon
  4. 2 teaspoons baking powder
  5. 1 teaspoon salt
  6. 2 eggs
  7. 1 cup milk
  8. ½ cup melted butter
  9. 2 teaspoons vanilla extract
  10. ¾ cup dried cranberries

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Mix together oats, brown sugar, cinnamon, baking powder, and salt in a large bowl. Beat in eggs, milk, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9×13-inch baking dish.
  3. Bake in the preheated oven until top is golden, about 40 minutes.

I halved the recipe and added peaches instead of the cranberries – It’s peach season, after all! I used rough cut oats and it was very hearty. I think next time I’ll cut back on the sugar, even though I do like my oatmeal on the sweet side. 😉

This baked oatmeal is easy and delicious!! My husband has me make double batches so he can take to work. I make them in a brownie pan and adjust the bake time. My coworkers love and I get lots of requests to share the recipe.

This was my first attempt at baked oatmeal, it was delicious. I made some minor changes; cut the sugar in half, substituted raisins for cranberries, and used 9×9 baking dish. I baked it for 35 minutes removed it from the oven let it stand for 10 minutes. Cut it with a serrated knife. Even though I tweaked recipe a bit, it’s good recipe. Definitely would recommend it!

I agree with many of the comments. I, too, use almond milk, use 1/3 cup of the brown sugar, sub unsweetened applesauce for the oil, and add a mixture of raisins, cranberries, dried cherries and walnuts. I bake it in a muffin tin for 35 min. Great part of a healthy breakfast.

I used this recipe because of its reviews. Sadly, it was overcooked even though I took it our earlier than the time it was supposed to bake and I thought it was very bland. It had a more of a granola consistency. Will not make again.

So good! The variations I made were 2 C oats, 2/3 C hemp hearts, and 1/3 C chia seeds in place of the the 3 C of oats. I only did 1/4 C brown sugar because I used a leftover apple crumble in place of the cranberries. It was plenty sweet and so delicious! If using chia seeds, I recommend letting the wet mixture set for a bit (maybe even overnight) before baking.

Delicious ~ Perfect for an early on the go breakfast. I let it cool, refrigerate then cut into bars. They are perfect for my very early morning rising. Like wonderful granola bars for a grab and go with coffee in hand. I always use parchment paper in the 9×13″baking dish (makes for easy cutting and removal). I use coconut milk, 1/2C brown sugar, add 3/4C chopped walnuts al so 2tsp of maple extract (yes, I still use the vanilla extract). This bakes up perfectly @ 35 minutes. Not only do I love it but my very picky family does too!

Just made this in 9×13 pan and feel it could be done in a 11×7 dish. I did cut brown sugar in half and was plenty sweet. I would start checking it at 30-40 minutes. I took it out at 37 minutes and it was a little too done.

Delicious! This is now my go-to baked oatmeal recipe, especially since it doesn’t have flour. Due to food allergies, I made it vegan with flax eggs and oat milk, and canola oil instead of butter. It is delicious with blueberries instead of cranberries, too.

easy recipe, my pan was slightly smaller than 9×13 and it fit well. it was too sweet though, next time i think 1/2 cup brown sugar would suffice. this is now in my “saved recipes”

Having lived in southern Lancaster County for a number of years, my husband and I are very particular about genuine baked oatmeal. This one is the real deal. Love using dried cranberries, but will try substituting apples next time. I halved the recipe for the two of us.

This is delicious! It’s not bars, and it’s not a bowl of oatmeal but somewhere in between. I decreased the sugar to 3/4 cup and wil probably do 1/2 cup next time, but then I sprinkled some mini chips on top. Spoon into a bowl and enjoy!

I made this without any sugar at all and it tasted great. I used blueberries rather than dried cranberries. The berries sweetened it up and we didn’t miss the sugar. It is a tad dry so a splash of almond milk just before eating would be a good idea.
