I overindulged and purchased the large package of waffles at Costco®. As soon as the kids became weary of them, I simply had to devise a way to get rid of them. What do you know, the kids devoured this quick-to-make treat and the waffles were gone in no time! For this recipe, I’ve used handmade waffles, which work just as well. Fresh strawberries, chocolate chips, and raisins have all been added; they taste great! Use your imagination to add unique toppings!

Ingredients

  1. 2 tablespoons butter
  2. ½ onion, chopped
  3. ½ green bell pepper, chopped
  4. 1 cup chopped cooked ham
  5. 8 eggs
  6. ¼ cup milk
  7. ½ cup shredded Cheddar cheese
  8. salt and ground black pepper to taste

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a 10-inch round baking dish.
  2. Melt butter in a large skillet over medium heat; cook and stir onion and bell pepper until softened, about 5 minutes. Stir in ham and continue cooking until heated through, 5 minutes more.
  3. Beat eggs and milk in a large bowl. Stir in Cheddar cheese and ham mixture; season with salt and black pepper. Pour mixture into prepared baking dish.
  4. Bake in preheated oven until eggs are browned and puffy, about 25 minutes. Serve warm.

This recipe was super easy to make it tasted fabulous I did add a little extra cheese on top once it was done before serving but even without that it would have been fabulous. I was hosting a bunch of guests for graduation this was easy to premake and leave and disposable pans and pop in the oven real quick as more guests arrive.

Made this for Father’s Day brunch & it was a hit! I sautéed the ingredients too. For more protein and fluff, I added a cup of small curd cottage cheese. A little extra protein and keto friendly. I will definitely be making this again & again! Yum!

Very tasty and easy recipe. I have a concern with the nutrition information accuracy. I ran the ingredients through an app designed to estimate the calorie content of a recipe and determined that the recipe as written is off by more than 100 calories per serving despite using reduce fat cheddar and 1% milk instead of whole. It is probably off by more if made as written. These numbers should not vary by this much. It got me questioning AllRecipes methods on nutrition values

Fantastic recipe. For the first time I made it exactly as written – and it came out perfect! I’ve had a hard time getting things like this to come out cooked enough, without being dry. Excellent dish! I made just as directed except I subbed 3/4 cp bacon + 1/4 potato for the ham, and used shredded provolone/mozz instead of cheddar. Cooked just as directed, came out beautifully!

I’m really not a fan of omelettes but decided to give this a try. I substituted ham for Jimmy Dean sausage patties, about 6. Baked it in a 10 inch pie pan. It turned out delicious. Husband loved it too. Oh I also sprinkled some extra cheddar cheese on top with 5 minutes left.

This was great. It was simple enough to make without doing too much in the morning. My family is vegetarian, so I used 4 beyond breakfast sausages, which was 1 cup of sausage after cooking and dicing. Other than that, I used cream because it was what I had on hand and followed the recipe from there. Will definitely make again.

This has all the flavor of a Denver Omelet and a lot easier to make. This is especially true if you are feeding more than 1 or 2 people because you don’t have to worry about your first omelet getting cold while you are making the others. One thing to note, I made this is an oven safe skillet. This cuts down on dishes as you need to sauté the vegetables first anyway. Also, this will puff up when you make it so give yourself room in the pan.
