Baked Boursin and Apple Pancakes

When grilling any type of meat, use this sweet and smokey BBQ sauce toward the end of cooking. It is a fantastic all-purpose BBQ sauce that I have used on steak, hamburgers, chicken, hot dogs, and pork ribs. Use immediately or let cool to room temperature, then transfer to a jar and store in the refrigerator.

Ingredients

  1. cooking spray
  2. ¾ cup milk
  3. ¾ cup all-purpose flour
  4. 3 large eggs
  5. ¼ teaspoon salt
  6. 2 tablespoons unsalted butter
  7. 1 apple – peeled, cored, and cut into 1/4-inch pieces
  8. 1 tablespoon lemon juice
  9. 1 tablespoon white sugar
  10. ½ (5.2 ounce) package garlic and herb cheese spread (such as Boursin®), crumbled

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Spray a pie plate with cooking spray.
  2. Blend milk, flour, eggs, and salt together in a blender or food processor until batter is smooth.
  3. Melt butter in a 10-inch skillet over medium heat. Cook and stir apple in hot butter until tender, about 5 minutes. Stir lemon juice and sugar into apples until sugar dissolves; pour apple mixture into prepared pie plate. Top with crumbled cheese spread and pour batter over apples and cheese into pie plate.
  4. Bake in the preheated oven until golden and set, about 25 minutes.

Great dish and easy to make. Added shallots since I had one that needed to get used and it really brought out the cheese flavor. Also I cook everything in my iron skillet so if you have one, no need to dirty a pie plate.

I didn’t care for the combination of apple and egg and couldn’t taste the Boursin cheese at all.
