Ingredients
- 2 teaspoons olive oil
- 1 bunch fresh asparagus, trimmed and cut into 1/2-inch pieces
- 1 pastry for a 10-inch deep-dish pie crust
- 6 large eggs, beaten
- ¾ cup milk
- ½ cup half-and-half cream
- 1 (2.8 ounce) can French-fried onions
- 6 ounces shredded Swiss cheese
- 5 ounces shredded Cheddar cheese
- 1 green onion, chopped
Instructions
- Heat olive oil in a skillet over medium heat; cook and stir asparagus until slightly tender, 5 to 10 minutes.
- Preheat oven to 375 degrees F (190 degrees C). Press pie pastry into a 10-inch deep-dish pie pan.
- Combine asparagus, eggs, milk, half-and-half, French-fried onions, Swiss cheese, Cheddar cheese, and green onion in a bowl. Pour into prepared pie pastry.
- Bake in the preheated oven until center of quiche is set and a knife inserted in the middle comes out clean, about 45 minutes. Allow to stand for 10 minutes before serving.

I had only a regular size pie crust, so I compensated by using 5 eggs, instead of 6, reducing the swiss and cheddar cheeses to a combined total of 8 oz, instead of a combined total of 11 oz and reduced the milk to 1/2 cup and used 1/2 cup of heavy cream (as I had no half and half). I also added approximately 1/2 to 1 cup of Deli cubed ham. It was absolutely delicious with no seasoning needed due to the salt in the cheeses and ham. The top browned up beautifully.
Fantastic base recipe. I eliminated the fried onion rings and added some finely minced red bell pepper and shallots. Best quiche I’ve ever had.

Very good. Only used part of Swiss, rest was CoJack. Picky husband art more than half.
I had to make a small change but regardless our lil family really enjoyed this recipe. I didn’t have cheddar cheese so used all Swiss cheese & added 1/2 tsp salt. Will be making again hopefully with the cheddar cheese as recipe calls for.
It was good, but needed more flavor. Just a couple of tweaks next time- it barely fit in my 10 inch deep dish pie plate and overflowed a little so next time I’ll use regular onion instead of the canned ones, and a bit less milk and half and half to see if more flavor comes through. Turned out pretty good, and I’ll make it again with a couple changes. I did sauté onions. I plan on adding salt, pepper, nutmeg. And, it’s almost enough for 2 quiches. I think a little more milk/cream and a little more cheese would nicely fill two crusts. Mushrooms could also be a good addition
I thought this was just okay. It didn’t have a lot of flavor, despite having a lot of ingredients. The french fried onions were a really nice add, but unfortunately it didn’t save the quiche. There’s way too much cheese in here as well. I wouldn’t make this again.

I’m an avid cook, and use this site often. Generally I need to tweak the recipes. This however was pretty spot on. Added black pepper to the eggs, tripled the green onion and browned them with the asparagus. Thats it. Excellent, and cooking time was spot on. Thanks
It was truly delicious and my hubby gobbled it up! I’m diabetic so made it in a well greased 8” glass baking dish (no crust) and baked as suggested. I used 1 cup of half and half and omitted milk and green onions. I also added 2cloves garlic and a little siraccia. Served with a salad and baguette. Will not hesitate to make it again.
I doubled recipe and only used crispy onions on top. Fantastic!

Made without crust and cooked as noted — it came out beautifully. I added about 1/2t salt to mix and a few grinds of pepper. Next time I’ll use 1t salt and more onion.

Very good quiche! I used yellow onion in place of the canned and sauteed that with the asparagus in olive oil and butter. I halved the recipe and should have taken it out of the oven earlier, at about 40 min (a little too brown at 45 min with my oven). I also made this crustless, which I see others did as well. I really don’t miss the crust or the extra carbs at all. Some garlic or onion powder would give a flavor boost.
Great side for Thanksgiving. Pleases meat eaters and vegetarians alike.
