The coziness of breakfast doesn’t really get any better than this baked oatmeal with toasty spices. This wholesome bake, which is flavored like an apple pie, may transform every morning into a memorable occasion. For a crowd-pleasing brunch option, serve it hot from the oven or bake a batch on Sunday as a make-ahead move for the week. If preferred, top bowls of the dish with cream and more maple syrup.

Ingredients

  2. 2 ½ cups uncooked rolled oats
  3. 1 teaspoon ground cinnamon
  4. 1 teaspoon ground ginger
  5. ½ teaspoon ground allspice
  6. ¼ teaspoon ground nutmeg
  7. ¼ teaspoon ground cardamom
  8. 1 cup chopped toasted pecans, divided
  9. 1 teaspoon baking powder
  10. ¾ teaspoon kosher salt
  11. 5 tablespoons unsalted butter, divided
  12. ½ cup brown sugar, divided
  13. 2 cups whole milk
  14. 1 large egg, lightly beaten
  15. 1 tablespoon vanilla extract
  16. 2 large Honeycrisp apples, peeled and diced, divided
  17. 2 tablespoons maple syrup

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Lightly grease an 11×7-inch baking dish with baking spray.
  2. Place oats in a large skillet over medium heat; toast, stirring often, until oats are beginning to brown and smell nutty, about 4 minutes. Add cinnamon, ginger, allspice, nutmeg, and cardamom; continue toasting, stirring frequently, for another 1 to 2 minutes. Transfer to a medium mixing bowl and cool slightly.
  3. Add 3/4 cup pecans, baking powder, and salt to the oat mixture; stir to combine.
  4. Melt 3 tablespoons butter in a large microwave-safe bowl. Whisk in 6 tablespoons brown sugar. Add milk, egg, and vanilla to the bowl, whisking until combined. Stir the oat mixture evenly into the milk mixture. Fold in 1/2 of the apple pieces. Spoon mixture into the prepared pan.
  5. Bake in the preheated oven until golden brown and set, 35 to 40 minutes.
  6. While the oatmeal bakes, add remaining butter and apple pieces to a nonstick skillet over medium heat. Add remaining brown sugar and maple syrup. Cook, stirring often, until apples soften and the liquid thickens into a syrup, 8 to 10 minutes.
  7. Spoon apple mixture over the baked oatmeal after you’ve removed it from the oven. Sprinkle remaining pecans over the top.
  8. Butter can be melted on the stovetop and then transferred to a bowl, instead of using the microwave.
  9. If you want to make yours a touch more indulgent, double the amount of sauteed apple syrup topping.

Second time making this, really enjoy it. I think I will double the topping next time, as it seems a tad dry. Great with a spoonful of yogurt or coconut cream, etc.

Delicious and not too sweet with just the right consistency. I swapped in walnuts for pecans because it is what I had on hand. It is the best oatmeal bake I’ve had.

Delicious baked oatmeal! Added raisins and next time will try craisins. It makes a lot for 2 people so I portioned it into freezer containers and that works great! Reheat with a little milk. Great for dessert with ice cream too!

I didn’t have everything the recipe called for so, I improvised a little. I used toasted walnuts, Fuji apples and skipped the ginger. It still tasted wonderful and I’d be glad to make it again. I baked it on a Sunday afternoon to serve on Monday morning. I scooped some in a microwave safe owl (chopping into it with my spoon) and poured whole milk (1/4 to 1/2 cup) over it before heating it in the microwave for about one minute and a half. My daughter ate her serving with a couple of breakfast sausages on the side. Delicious!

This oatmeal had delicious flavor! I don’t have a 7×11-inch pan so used a 9-inch square one. I should have cut back on the bake time a little to retain more moisture. The sauteed apples on top were great. Enjoyed it with cream and looking forward to the leftovers.
