Almond French Toast

Years ago, when I first started cooking, I attempted this recipe for Sicilian meatloaf. Since then, it has consistently been a hit and is nearly impervious to error. This meatloaf retains its moisture and tenderness while maintaining a great flavor. For a traditional comfort food dinner, serve with garlic mashed potatoes and steamed carrots.

Ingredients

  1. 1 cup slivered almonds
  2. 3 eggs
  3. 1 cup milk
  4. 3 tablespoons all-purpose flour
  5. ¼ teaspoon salt
  6. ½ teaspoon baking powder
  7. ½ teaspoon almond extract
  8. 1 teaspoon vanilla extract
  9. 12 thick slices French bread
  10. 3 tablespoons canola oil
  11. 3 tablespoons butter
  12. 1 tablespoon confectioners’ sugar for dusting, or as needed (Optional)

Instructions

  1. Toast almonds in a small saucepan over low heat, tossing frequently, until lightly browned, 5 to 10 minutes. Remove from the heat and set aside.
  2. In a large bowl, whisk together eggs, milk, flour, salt, baking powder, almond extract, and vanilla extract. Soak bread slices in the mixture until saturated, then transfer to a shallow pan. Cover and refrigerate for approximately 1 hour.
  3. Heat canola oil and butter in a large skillet over medium heat. Press one side of each soaked bread slice into toasted almonds to coat. Fry bread slices on both sides until golden brown. Dust with confectioner’s sugar before serving,

Awesome recipe!!! The only thing I changed was throwing in a little sea salt for toasting the almonds and some cinnamon for the egg mix. Definitely going to make it again.

Made it (mostly) according to recipe. Browned the almonds, took a little longer than it said, used a French Brioche bread for my bread. It made 8 pieces. I ended up coming up with another idea last minute, buttered the top of the toast, added maple syrup (medium amber 100% pure, non-GMO organic) then a scoop of vanilla bean ice cream followed by caramel syrup and hot fudge and a nice scoop of Cool Whip on top. There wasn’t any left and we were all stuffed at about the halfway point, just tasted too good to stop eating it! My wife loved it and our 9-year-old thought we had given him dessert for breakfast!

Used sourdough bead, but French bread would probably be better. Make French toast first,then press in the almond slivers.

This batter can be prepped the day before. I even baked fresh loaf of bread (Bridgeford Frozen) Because I baked it the day before I lighted toasted in the oven to dry it out a bit.

I made a baked version of this which in my opinion is much better. Less almonds, more eggs and milk. Leave in fridge overnight then bake in the morning. Easy!

Im not fan of French Toast, this recipe piqued my interest with the shaved almonds for texture and a nutty flavor, plus the almond extract added an Amaretto flavor that made the French Toast taste like it was from a B&B. I cut up organic strawberries, black cherries and bananas that I layered in between two pieces and on top. I doubled the almond extract and added a liberal amount of cinnamon.

The flavour of the almond extract combined with the crunch of the sliced almonds makes this a delicious option for a special breakfast. I have made these numerous times. The step of toasting the almonds may be skipped over entirely as the nuts will brown while the french toast are face-down on the griddle. I use MUCH MORE mixture than is called for in this recipe. I suppose the amount required depends on the thickness of the slices + the size of the loaf.

This was very filling and very tasty. I may have sliced my bread a bit to thick but other than that my husband and I both enjoyed it. My son really did not so I put four starts because chances are if we all aren’t going to eat it I won’t make it again.

Yummy!! Used a little bit of butter instead of canola oil and I did not brown the almonds first as they got plenty of browning while they cooked.
