Air Fryer Keto Pumpkin Pancakes

Boxed Spanish Rice mix is combined with ground venison, kidney beans, tomatoes, and corn to make a simple one-dish supper with a light Mexican taste. For children and others who are picky about deer meat, it is ideal!

Ingredients

  1. nonstick cooking spray
  2. ½ cup pumpkin puree
  3. ½ cup peanut butter
  4. 2 eggs
  5. 1 teaspoon vanilla extract
  6. ½ teaspoon pumpkin pie spice
  7. ½ teaspoon baking soda
  8. 2 packets stevia sweetener (such as Truvia®)
  9. 1 pinch salt

Instructions

  1. Line the air fryer basket with parchment paper and spray with cooking spray.
  2. Combine pumpkin puree, peanut butter, eggs, vanilla, pumpkin pie spice, baking soda, sweetener, and salt in a bowl. Stir until well combined.
  3. Working in batches if necessary, place about 3 tablespoons batter for each pancake on the parchment paper in the air fryer basket, leaving about 1/2 inch space in between.
  4. Place basket in the air fryer oven and cook at 300 degrees F (150 degrees C), without flipping, until the bottom side is fully cooked, 4 to 6 minutes. Repeat with remaining batter.
  5. I developed this recipe using an air fryer oven. This allowed me to watch the cooking process. If using a regular air fryer, check the basket frequently because they will burn quickly.
  6. Any nut butter can be used in place of peanut butter.

These were delicious! I made them in my oven w/my air-fry option. I increased the baking time because mine were a little thicker. I will definitely make them again.

Texture and flavor was great. Loved that they didn’t have coconut or almond flour like most keto pancakes. Only drawback is that I could not perfect making them in my Ninja Air Fryer. The parchment paper would curl up over the pancake no matter what I did with it.
