In less than 20 minutes, you can have this frittata ready. Make a hot breakfast with some eggs, some leftover breakfast sausage, some chopped vegetables, and some shredded cheese! Wrap it in a napkin and eat it while running, or make it a meal by adding some whole wheat toast and juice! It reheats nicely if there is any left over.

Ingredients
- cooking spray
- 2 teaspoons butter (Optional)
- ⅓ cup diced bell pepper
- ⅓ cup chopped onion
- ½ cup breakfast sausage crumbles
- ½ cup shredded Colby Jack cheese
- 6 eggs
- salt and ground black pepper to taste
- ½ teaspoon hot pepper sauce (Optional)
- ¼ cup salsa, or more to taste (Optional)
Instructions
- Preheat a 5.8-quart or larger air fryer to 350 degrees F (175 degrees C) according to manufacturer’s instructions.
- Spray cooking spray on the bottom and sides of a small metal container, designed to be an inner pot, about 6 inches round and 4 inches high.
- Add butter for flavor, insert inner pot into the air fryer, and melt butter for 45 seconds. Add bell pepper and onion and fry for 2 minutes.
- Carefully remove the inner pot and stir in sausage crumbles. Sprinkle with Colby Jack cheese and set aside.
- Crack eggs into a bowl and stir until yolks and whites are well combined. Season with salt, pepper, and hot sauce; stir to combine. Pour egg mixture over the other ingredients in the inner pot and lightly mix everything together.
- Return inner pot to the basket of the air fryer and cook until the top of the frittata is lightly brown and a toothpick inserted in the center comes out clean, about 12 minutes. Continue air frying in 30-second intervals until frittata has set. Serve warm or at room temperature with salsa.
- You can also serve the frittata with pico de gallo instead of salsa.

This was such an easy breakfast with an equally easy clean-up! I made one using 4 eggs, spoon of water, salt & pepper, mushroom pieces, Colby jack, and black Forrest ham. I lined the pan with foil and sprayed with butter spray. I put it on the middle shelf, turned the oven to the 350, and baked 5 minutes, flipping half way with an extra large spatula. I cut in half for 2 servings as in my picture. I will make this again trying a variety of fillings for a hot yet fast breakfast.

The first time I made it exactly as published and discovered that in my air fryer it too much longer: 20 min. We loved it as a diner entree with a salad. The second time I left out the cheese and salsa, but added mushrooms and ham. That was also good!
