Sunny’s 1-2-3 Hollandaise Sauce

Ingredients

  1. 1 stick (8 tablespoons) unsalted butter
  2. 3 teaspoons fresh lemon juice
  3. 2 large egg yolks
  4. Kosher salt and freshly ground black pepper

Instructions

  1. In a small pot, melt the butter over medium heat.
  2. Add the lemon juice and yolks to a medium bowl and whisk together.
  3. Slowly stream the melted butter into the yolk mixture while continuing to whisk. Take your time with adding the butter. Once completely added, taste and season with a little salt and pepper. Allow the mixture to cool slightly to thicken.

Watching this episode now and Sunny added paprika. A pinch of paprika although Jeff mentioned 3 pinches. For those that said this has no flavor try this am I adding the paprika or taste your food before serving and adjust the seasonings. I’ve been making this for years after watching the episode back in 2016 2017 and it always comes out perfect. I do sprinkle. Just a tiny bit of paprika on top after pouring on the eggs to give it some color.
I also have tried finally chopped chives on top of the hollandaise or serve it with hot sauce on the side.

Great quick hollandaise sauce. Plenty of flavor, if you don’t get enough flavor out of it you may need to season it more

My favorite breakfast-type meal to order out is eggs benedict, but I don’t eat out very often. I had a craving, then I saw this recipe being made and tried it a day or two later. Yummy…and so, so easy! Even my poached eggs (my first attempt) turned out great. I will be making this again and again! Thanks, Sunny!!

I use salted butter when I make this.  I also use a pinch of cayenne pepper and maybe a few grinds of pepper.
