This toast doesn’t actually include any pineapple, despite its name. This dish gets its name from the sight of the golden, cracked pineapple skin. This straightforward pastry has a pleasing contrast of textures that you won’t be able to resist—it’s soft and sweet with a buttery, crackly topping. This dish, which was derived from cristina_yin on TikTok, is a fun, simple take on the Chinese sweet bun and was inspired by a typical, Hong Kong bakery-style bolo bao or pineapple bun. Most Asian bakeries carry milk bread, which is the softest, lightest base for this single-serve snack.

Ingredients

  1. 1 ½ tablespoons butter, softened
  2. 1 ½ tablespoons white sugar
  3. 2 ½ tablespoons all-purpose flour
  4. 1 slice milk bread
  5. 1 large egg

Instructions

  1. Preheat an air fryer to 200 degrees F (93 degrees C) according to manufacturer’s instructions.
  2. Use a fork to blend the butter and sugar together in a medium bowl. Mix in flour and combine until smooth, reaching a cookie dough-like texture.
  3. Spread the butter mixture evenly over the slice of milk bread, smearing until smooth. Use a knife to score the bread topping with criss-cross lines that resemble a pineapple skin. In a small bowl, beat the egg to form an egg wash. Carefully spread a thin layer over the bread topping.
  4. Cook the bread in the preheated air fryer for 4 minutes; turn up the air fryer temperature to 400 degrees F (200 degrees C). Continue to cook bread slice until toasted, 3 to 4 minutes. Serve immediately.

My curiosity got the best of me, and I had to try this. Although tasty, we found this to be mega sugary, and if I make again, I’ll reduce the amount of sugar (personal taste). You really do want to make more than one piece, otherwise, you’re throwing away a lot of egg wash. One thing that I would do differently is brush on the egg wash, and THEN score the bread. You want those lines to show, and if you brush on the egg after you’ve scored, the egg settles into the lines. I went back in and scored again. Not a huge deal, but just a little something to ensure that the overall look resembles that of pineapple skin. We had for breakfast along with some fresh fruit, but with its sweetness might even work for dessert? It certainly is decadent, no doubt about that, but it’s pretty tasty and very quick-and-easy to make.
