This calzone recipe can be divided in half to make two standard calzones. Anything goes in them. They taste good, too!

Ingredients

  1. 1 ½ cups white sugar
  2. ½ cup vegetable oil
  3. 2 large eggs
  4. 1 ¾ cups sifted all-purpose flour
  5. 1 teaspoon baking soda
  6. ½ teaspoon ground cinnamon
  7. ½ teaspoon ground nutmeg
  8. ¼ teaspoon salt
  9. ⅓ cup water
  10. 1 cup cooked and mashed sweet potatoes
  11. ½ cup chopped pecans

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×5-inch loaf pan.
  2. Combine sugar and oil in a large bowl; beat well. Add eggs and beat until well combined. Combine flour, baking soda, cinnamon, nutmeg, and salt in a separate bowl. Stir flour mixture into egg mixture alternately with water. Stir in sweet potatoes and chopped nuts. Pour batter into the prepared loaf pan.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

Thank you for this! Recently diagnosed with major allergies, I have lost the will to cook & bake. What I did differently from recipe when doubled-1c ea white and brown sugar, 1c applesauce, 1/3c oil, 3 c oat flour, 3/4tsp nutmeg, 1/4tsp ginger. Made into muffins baked at 400 for 14 mins (convection). Everything else was the same. These were moist and flavorful.

We’ve been making sweet potato MUFFINS with the recipe for years, and the whole family devours them in no time! We always swap the 1/2 cups of pecans for a full cup of chocolate chips though! The muffins are usually done after about 15-20 minutes in the oven. YUMMY!

My family and I love this recipe! The only thing I done different is I don’t use the pecans or any other nut. Choking hazard for the littles. Thought about maybe using finely diced apples or something like that. Very good!

I made this recipe exactly as it is written and it was amazing! Don’t change a thing! Try it as it is written and you won’t be disappointed. Remember a tip… make sure your eggs are room temp as well as your sweet potatoes so it will rise good.

This is a easy and very tasty bread! I always have double the recipe. My family and co-worker ask for it all the time! I add cranberries to it in place of pecan for those with nut allergies.

This was absolutely amazing! Is great alone but I topped with egg, sprinkled egg with parsley and then drizzled with maple syrup. I could eat this for breakfast daily. My daughter is autistic and hates vegetables and she devoured this. A family favorite for sure.

Great recipe! I made this for my toddler who suddenly did not like roasted sweet potatoes so I made a couple adjustments. I used only a half cup of maple syrup instead of sugar and also used whole wheat flour. The bread came out great! I’m an avid baker, so I’m sure it would be good with regular flour and sugar as well
