The broth is the key component of a true Vietnamese pho soup. The combination of beef bones, fish sauce, star anise, and ginger simmers for at least 6 hours, producing a flavorful but time-consuming complex and aromatic soup. Thinly sliced beef and rice noodles are topped with the savory broth and fresh garnishes.

Ingredients

  1. 1 cup warm water (110 degrees F (43 degrees C))
  2. 2 ½ teaspoons active dry yeast
  3. 3 tablespoons white sugar
  4. 1 ½ teaspoons salt
  5. 3 tablespoons olive oil
  6. ½ teaspoon ground thyme
  7. ½ teaspoon garlic powder
  8. 2 teaspoons crushed dried rosemary
  9. 3 cups all-purpose flour

Instructions

  1. Pour the water into the pan of a bread machine, then sprinkle in the yeast and sugar. Let the mixture sit in the bread machine until a creamy foam forms on top of the water, about 10 minutes. Sprinkle in the salt, then add olive oil, thyme, garlic powder, rosemary, and flour. Set the machine for light crust setting, and start the machine.
  2. I use the light setting for the crust and the basic bread setting.

This bread was AMAZING! Very light texture, fantastic flavor. I added the ingredients in the order of my machine directions, so water, oil, flour and then the dry seasoning with the yeast in the little well in the middle. I’m not a huge garlic fan, so I decreased the garlic powder to 1/4 tsp, and upped the rosemary to 2 tablespoons. I also added about a tablespoon of fresh basil. Set machine to basic, 2lb, medium crust. I will ABSOLUTELY be making this break again. My family devoured it immediately!!

I only followed the bread machine instructions for adding ingredients and put the yeast in last on top of my dry ingredients. This was one of the best breads I’ve ever tasted. The bread did not last a day in my house before it was gone. This one is a keeper!

Wow! Super easy and so delicious!! I came looking for a rosemary and olive oil recipe for my new bread machine. Found this one and I am so glad I came upon it first. I’ve made 3 loaves of it so far, every single one of them perfect and delicious. It bakes up nice and high, and light and soft. I want to try it with a mix of whole wheat flour next. I even want to make little rolls so I can freeze them and have them available anytime. I’ve used the bread for sandwiches, and even had a hamburger on two slices instead of a bun. I have a Cuisinart compact machine, so I put the ingredients in according to the machine’s directions. I did not proof the yeast separately, just made a well in the top of the flour. I was careful to heat the water to between 97°F and 110°F each time, and to measure exactly – I’ve found the flour so much easier to just measure by weight right into a bowl set on a small digital kitchen scale scale (be sure to zero out the bowl weight first!) (The gram weight of different flours by cup is usually listed on the flour bag.) Anyone who has read reviews of the Cuisinart compact machine will tell you not to go over the 3 cup flour limit for 1.5 lb bread. Believe me, properly done, this recipe will give you a loaf that fills the 2lb pan. This is an awesome base recipe for rosemary and olive oil bread.

I added a little coconut cream-1/4 cup, and 3/4 cup water for a little more richness (instead of 1 cup water). I used honey instead of white sugar and gluten free bread flour. The taste is so good. Very, very dense bread.

My family fights over this bread. It takes 3 hours to cook in my bread maker, but it’s worth the wait. I like it a bit more brown, so I set the machine to medium. Yummy. Goes with everything.

Wonderful! I tried another bread recipe that didn’t call for the yeast to rise. Waiting the extra 10 minutes for the yeast and sugar to do it’s thing made the bread light and fluffy. Next time I will add more thyme and rosemary. I had fresh of both and put in 1 tablespoon, but I could have doubled it easily.

LOVED IT!! I followed the pre-proffing of yeast and somehow it did not come out good (didn’t rise..too heavy…just not perfect) however my second load I just did liquid, dry ingredients, fresh rosemary, and yeast last…well it was amazing. I also cut the salt to 1 teaspoon as it was too salty for us with 1 1/2.
