Ingredients

  1. 2 ⅔ cups unbleached all-purpose flour
  2. 3 tablespoons malted milk powder (such as Carnation®)
  3. 2 ½ tablespoons white sugar
  4. 2 ¼ teaspoons active dry yeast
  5. 1 teaspoon salt
  6. 1 ¾ cups whole milk
  7. ¼ cup water
  8. ¼ cup butter
  9. 3 eggs
  10. 1 teaspoon vanilla extract

Instructions

  1. Sift flour, milk powder, sugar, yeast, and salt together in a large bowl.
  2. Combine milk, water, and butter in a small saucepan over low heat. Heat until an instant-read thermometer inserted into the mixture reads 125 degrees F (52 degrees C), about 5 minutes; butter may not melt completely.
  3. Pour milk mixture over flour mixture in the bowl; add eggs and vanilla extract. Mix until batter is thoroughly blended. Cover bowl loosely with plastic wrap. Refrigerate, 8 hours to overnight.
  4. Preheat a waffle iron according to manufacturer’s instructions.
  5. Pour 1 cup batter onto the preheated waffle iron; close and cook until the iron stops steaming, about 5 minutes.

3.29.20 Honestly, I was concerned when I took the waffle mixture out of the fridge this morning, not looking good I was thinking. I’ve uploaded a photo, so you’ll know what to expect. But don’t panic, all it took was a good stir, and it was good-to-go. Surprisingly, these were some of the best waffles I’ve ever had. I ended up with eight 4-inch square waffles that rose to about 1-inch in height (thanks to the yeast). They were moist, tender, golden brown, and simply delicious! I’d mixed up the dry mixture early yesterday, but when I was finishing up heating the liquid last night before I went to bed, I was grumbling “why did I get myself into this?” But I soon forgot about that this morning when all I had to do was heat up the waffle iron, stir up the batter, and in minutes, had a wonderful waffle breakfast on the table. Mike Marks, thanks for sharing this recipe, it’s definitely worth the effort and nice to try something totally different for waffles.
