I’m going to demonstrate how to create the Niçoise, a tuna salad that is stuffed and crushed within a complete loaf of bread and is considered to be the most famous tuna sandwich in the entire world. The longer it sits in its own juices, the better, according to those who give things serious thought. This sandwich must be prepared in advance.

Yield: 1 to 16 – inch crust

Ingredients

  1. 1 cup warm water (110 degrees F/45 degrees C)
  2. 3 tablespoons olive oil
  3. 3 tablespoons white sugar
  4. 1 teaspoon salt
  5. 2 ½ cups bread flour
  6. 2 teaspoons minced garlic
  7. 2 ¼ teaspoons active dry yeast
  8. ½ teaspoon dried oregano
  9. ½ teaspoon dried basil leaves

Instructions

  1. Combine water, olive oil, sugar, salt in pan of bread machine Add flour, then sprinkle garlic on flour. Lastly add yeast.
  2. Turn machine on dough cycle. As the dough mixes, sprinkle on oregano and basil until it suits you for color and taste. Let mix for about 15 to 30 minutes. Let the dough rest from 5 to 30 minutes. The longer it rests, the thicker and more tasty the crust. Meanwhile, preheat oven to 475 degrees F (245 degrees C).
  3. Roll out dough on a lightly floured surface. Spray a large pizza pan with nonstick cooking spray. Place dough on pan and add your choice of pizza toppings.
  4. Bake in preheated oven until golden brown, about 12 to 15 minutes.

This is my go to pizza dough recipe. I have tried many many recipes over the years. I cut back on the sugar to 1 tbs and added more spices including Italian seasoning. If you’re one giving it a bad review you’re doing something wrong. I’ve made this many many times and it’s been perfect every single time.

I’ve been making this dough recipe for years and it never fails!! Keep in mind that sometimes you will use either less or more water than stated. This will all depend on the humidity level you’re in. I just pour until it’s the perfect consistency.

Great recipe! The only things I would change is the sugar content and the flour content. 3 tbsp sugar in my opinion makes the crust much too sweet. and I usually add an extra ~1/8 cup flour because the dough is very wet. Otherwise awesome recipe!

Just delicious! I pre-bake a little longer for a more well done crust (still chewy in the center!) I also add a good amount of no salt mrs dash while its mixing It’s so simple and substantial. Also great as leftovers! I can top with anything… so perfect for fridge clean out

Followed all the recommended amounts of ingredients, and made by hand. I had to add a good amount of extra flour to get the dough drier. However ended up splitting the dough into two portions so I could eat one now and make one later this week. Pizza turned out great. Nice and fluffy but crispy on the outside

Made as directed, except I used 1 tsp granulated garlic & added the herbs (also added 1/2 tsp. lavender from my garden) on top of the flour. I brushed crust edges with olive oil to keep it from over cooking. Used convection oven at 450 for 12 mins. , but crust & cheese still got dark. Crust was very good & soft, but I would prefer it not be so dark. This was my first time making pizza totally from scratch, so I’ll turn the temp. down to 425 next time.

I made this by hand and it turned out great. My husband loved the spices. We have a very large pizza pan and it came out with an average thickness crust with a fairly thick border. Perfect for our pan but I would imagine very thick in a smaller size. It was crunchy on the outside, chewy inside, like a good bread should be. The dough was on the sticky side but I just kept my hands and surface lightly dusted with flour and it was fine. My new go to recipe.
