Ingredients

  1. 1 cup packed light brown sugar
  2. 1 cup applesauce
  3. 1 large egg
  4. 1 ½ cups all-purpose flour
  5. 1 ½ teaspoons baking soda
  6. 1 teaspoon ground cinnamon
  7. ½ teaspoon salt
  8. 1 ½ cups frozen raspberries

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
  2. Stir brown sugar, applesauce, and egg in a bowl until well combined. Add flour, baking soda, cinnamon, and salt; stir until just combined. Fold in raspberries gently.
  3. Use a disher scoop to portion uniform amounts of batter into the prepared muffin tin.
  4. Bake in the preheated oven until muffins are golden brown and a toothpick inserted into the center comes out clean, 15 to 20 minutes. Remove muffins from the tin immediately and cool on a wire rack.

These are the very best muffins I have ever had. The recipe was very easy to put together & no fat so the calories were low. I have baked them several times with rave reviews every time. I do bake them for 30 minutes rather than 20 as it gives the muffins a nice crust on top. The cinnamon really comes through nicely & adds a wonderful aroma when baking. Definitely a 5 plus rating! This recipe is now at the top of my muffins recipe.

These are the most moist and delicious muffins! I use 1/2 cp applesauce and 1/2 cp of canola oil but will try using ALL applesauce next time; just made my 4th batch earlier today. I usually drizzle a glaze over muffins when cooled. Recipe is fast, easy and is often requested by family and friends!
