Quick ‘n Easy Blueberry Oat Biscuits

Korean-flavored beef meatballs that are absolutely amazing! If preferred, serve with a soy-vinegar dipping sauce.

Ingredients

  1. 2 cups baking mix (such as Bisquick®)
  2. ¾ cup rolled oats
  3. ½ cup skim milk
  4. 1 tablespoon hemp seeds (Optional)
  5. 1 cup blueberries
  6. 2 tablespoons light butter, melted
  7. 1 tablespoon brown sugar

Instructions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Combine baking mix, oats, milk, and hemp seeds in a bowl; stir until dough forms a ball. Fold in blueberries until evenly distributed.
  3. Drop heaping teaspoonfuls of dough onto an ungreased baking sheet.
  4. Bake in the preheated oven until golden brown, 8 to 10 minutes. Brush each biscuit with melted butter; sprinkle with brown sugar.
  5. Substitute margarine for the butter if desired.
  6. If dough is too wet in step 1, add more baking mix or oats gradually until consistency thickens.

I cut the recipe in half and needed to add just a little more milk to even make a ball of dough. It was difficult to get the blueberries incorporated inside the dough, so I just made sure they were on the outside, pushing them in some. I really didn’t have high hopes for this recipe. However, they are pretty good. I would especially enjoy them with tea in the afternoon.
