Ingredients

  1. 4 ½ cups whole wheat flour
  2. 1 cup white sugar
  3. 1 ½ teaspoons baking powder
  4. 1 ½ teaspoons baking soda
  5. 1 ½ teaspoons salt
  6. 1 ½ teaspoons ground cinnamon
  7. 1 ½ teaspoons ground nutmeg
  8. 1 ½ teaspoons ground cloves
  9. 3 cups pumpkin puree
  10. 1 ½ cups unsweetened applesauce
  11. 3 eggs
  12. 2 medium bananas, mashed

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease three 9×5-inch loaf pans.
  2. Mix flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves together in a large bowl. Mix pumpkin puree, applesauce, eggs, and bananas together in another bowl. Add pumpkin mixture to the flour mixture, mixing until well blended. Pour batter evenly into the prepared loaf pans.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 60 minutes.
  4. You can use fresh pumpkin puree in place of canned. I followed Elana’s Pantry’s easy steps to roast my sugar pumpkin to get my puree.
  5. To make muffins, grease three 12-cup muffin tins or line with paper liners. Bake for 30 minutes.

Instead of 2 bananas and 3 cups of pumpkin, I used 4 bananas and a regular 15oz can of pumpkin. I also subbed coconut sugar (no reason except I’m trying to get rid of it) for the sugar – the end result isn’t very sweet but I don’t know if that’s because of the coconut sugar or just not enough sugar. Anyway, all that said, the batter was way too thick so I added about another cup of applesauce which helped texture-wise. Finally, the real reason for the low rating is that the flavor is VERY heavy on the spices. I would recommend cutting way back on the cloves, or just replace the cinnamon/nutmeg/cloves combo with a similar amount of premade pumpkin pie spice.
