Old-Fashioned Porridge and Molasses Bread

This is my signature biryani recipe, as my mother has dubbed it. It’s healthy and has half of the calories of a normal take-away so that’s a bonus!

Ingredients

  1. 3 cups boiling water
  2. 2 cups rolled oats
  3. ¼ cup shortening
  4. 2 teaspoons white sugar
  5. 1 cup warm water (100 degrees F (38 degrees C))
  6. 2 (.25 ounce) packages active dry yeast
  7. ⅔ cup molasses
  8. 4 teaspoons salt
  9. 8 ½ cups all-purpose flour, or as needed

Instructions

  1. Pour boiling water over oats and shortening in a bowl. Stir until shortening melts; let stand for 20 minutes, giving it a stir once in a while.
  2. Meanwhile, dissolve sugar in lukewarm water. Add yeast and let stand for 10 minutes. Stir briskly with a fork.
  3. Stir yeast mixture into the partially cooled oat mixture with molasses and salt. Let cool to lukewarm, 5 to 10 minutes. Beat in 2 1/2 cups of flour, gradually adding remaining flour as needed.
  4. Turn dough onto a floured surface and knead, 8 to 10 minutes. Shape into a smooth ball and place in a greased bowl, rolling the dough so the top is greased. Cover and let double in size, about 1 1/2 hours.
  5. Punch dough down and shape into 4 loaves. Place into greased 8 1/2×4 1/2-inch bread pans. Cover and let rise until doubled in size, about 1 hour.
  6. Preheat the oven to 400 degrees F (200 degrees C).
  7. Bake in preheated oven until tops are golden brown, 30 to 35 minutes.

I make this recipe at least once every two weeks. I make half batch (2 loaves) without modifying the ingredients. I slice it and freeze one loaf while we eat the other. I use my stand mixer and let it knead the dough for about 15 minutes. It doesn’t always turn out pretty (my fault), but it is good!

No way to edit my review so I’ll continue here: pour 1 cup boiling water over 2/3 cup oats & 2T butter, stir & let stand. Then put 1/3 cup water, 1/4 cup molasses, and the oat mixture in the pan of bread machine. Add 3 cups flour, 1-1/4 tsp salt, 1 tsp sugar, and 1-1/2 tsp yeast and set machine for whole grain cycle. Marvelous!

Five stars all the way! Oh my, this is one of the easiest and best bread recipes. Nice and crusty on the outside and soft and flakey on the inside. The flavour is amazing. I made no changes other than halving the recipe and I will make again. Thanks for sharing!
