Old-Fashioned Johnny Cake

Ingredients

  1. 1 cup yellow cornmeal
  2. 2 tablespoons whole wheat flour
  3. ½ teaspoon salt
  4. 1 tablespoon white sugar
  5. 1 teaspoon baking powder
  6. 1 ½ tablespoons shortening, melted
  7. 1 cup boiling milk
  8. 1 egg, separated

Instructions

  1. Preheat oven to 275 degrees F (135 degrees C). Lightly grease a 9×9 inch baking pan.
  2. Sift cornmeal and flour together and spread thinly on a baking sheet. Bake in preheated oven until lightly brown, about 10 minutes. Let cool. Raise oven temperature to 400 degrees F (200 degrees C).
  3. In a large bowl, combine cornmeal mixture, salt, sugar and baking powder. Pour in shortening and milk; stir to blend.
  4. In a separate large bowl, beat egg white until stiff. In a third bowl, beat egg yolk then fold into egg white. Gently stir flour mixture into beaten egg. Pour into prepared baking pan.
  5. Bake in preheated oven for 45 to 50 minutes, until golden brown.

His is not my family recipe for Johnny cake, ours is made with flour and no corn meal. But different regions have different recipes for the same thing. I tried this recipe to see if I liked it and it reminded me more of corn pone or sorta like one big corn dodger. I think that I will stick with corn bread or our recipe for Johnny cake. thanks for submitting recipe and letting me try it, nothing ventured is nothing gained.

Made these for breakfast. They were quite tasty. However they were very dry. We covered them in whipped cream and fried apples.

My husband fondly talks about his grandmother making johnny cakes so my children and I surprised him and served them along side of a hearty chili for dinner. The cakes were so tasty. I used 1 TSP of honey instead of sugar like someone else suggested. I also used 1 cup of cold lowfat buttermilk. I just mixed everything together — although I did whisk the egg white. I cooked them like pancakes on an electric griddle — went very fast. The children (9 and 11) were able to turn the cakes on the griddle — they had a blast. My first review didn’t show up, so here it goes again! I found almost the exact same recipe for this but it was made into pancakes! I loved it! It had double the amount of milk and I used honey instead of sugar. I mixed all the ingredients together and cooked it on a griddle, just like pancakes…also called ‘Johnny Cakes’… I served it with a fried egg ontop and sprinkled it with bacon salt and green onions, as you can see in my photo! We loved it!
