Since I don’t always have the money to buy my preferred breakfast foods, I’ve created my own version of a dish from a neighboring bagel shop.

Ingredients
- 8 everything bagel thins
- 1 (8 ounce) container whipped cream cheese
- 1 medium tomato, sliced
- 1 (4 ounce) jar capers
Instructions
- Split bagel thins and toast the bagel thins until lightly golden.
- Smear 2 tablespoons whipped cream cheese on each bagel. Top each bagel with a tomato slice, 1 ounce flaked smoked salmon, and capers. Serve immediately.

I make this all the time. The everything bagel is a key ingredient because of the extra crunch and seasonings. If you only have regular “brick” cream cheese, warm up a few ounces of it in the microwave. I also add sliced sweet or red onion and lettuce to my sandwiches for even more crunch.
