In our house, there is one zucchini bread recipe that we always make. The kids are content to eat these muffins, which were passed down from Meme, for breakfast, snacks, and even as a healthy dessert. Enjoy!

Ingredients

  1. 2 cups white sugar
  2. 1 cup vegetable oil
  3. 3 eggs
  4. 3 teaspoons vanilla extract
  5. 2 cups grated zucchini
  6. 3 cups all-purpose flour
  7. 3 teaspoons ground cinnamon
  8. 1 teaspoon salt
  9. 1 teaspoon baking soda
  10. ½ teaspoon baking powder
  11. 2 cups chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease or line 36 muffin tins with paper liners.
  2. Whisk sugar, oil, eggs, and vanilla extract together in a large bowl. Stir in zucchini.
  3. Combine flour, cinnamon, salt, baking soda, and baking powder together in a small bowl. Add to wet ingredients slowly and mix until just combined. Fold in walnuts.
  4. Spoon batter into the prepared muffin cups, filling each 3/4 full.
  5. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes up dry, 20 to 25 minutes.
  6. For mini muffins, baking time should remain the same. Resulting batter can also be divided evenly among 2 loaf pans for zucchini bread. Simply bake at 350 degrees F(175 degrees C) until a knife inserted in the center comes out clean, at least 1 hour.

Really great muffins! Good texture,nice mounded muffintop (I hate flat muffins!) and great taste. Was using up some frozen zucchini I had grated prior to freezing, and some leftover crushed pineapple. Also used 1 c of coconut palm sugar in place of white as I wanted to use it up. Will definitely make these again!

I did the muffins instead of the two loaves of bread. This recipe is excellent! I just cut back some of the cinnamon so as not to overpower the other flavors. Cook time was spot on! Best recipe for Zucchini Bread or muffins I have ever used. This is our new family recipe. Thank you so much!
