An airy malted bread that goes well with smoked salmon.

Ingredients

  1. 1 cup warm water
  2. 2 tablespoons nonfat dry milk powder
  3. 2 tablespoons butter, softened
  4. 2 ½ tablespoons brown sugar
  5. 1 teaspoon salt
  6. 2 cups bread flour
  7. 1 cup malted barley flour
  8. 2 teaspoons active dry yeast
  9. 1 tablespoon milk

Instructions

  1. Place all ingredients (except the milk) into the bread machine pan in the above order, or as directed by the manufacturer. Select the Basic Bread setting; press Start.
  2. After the baking cycle is complete, remove the bread from the pan and brush the just baked bread with milk. This will give it a soft and shiny crust.

I made it but I don’t own a bread machine. That isn’t real bread. The taste was fine. But I will have to tweak it. Recipe should have alternate baking instructions.

Thick, dense loaf! I used honey instead of brown sugar, and used 1/2 water and 1/2 soy milk for the liquid, while omitting the dry cow’s milk. Because of using only whole wheat flour, I didn’t even use as much flour as the recipe calls for. Great taste!
