Ingredients

  1. 1 cup warm homemade kefir
  2. 2 tablespoons warm homemade kefir
  3. 3 cups bread flour
  4. 2 tablespoons white sugar
  5. 1 teaspoon salt
  6. 2 ½ teaspoons instant yeast

Instructions

  1. Pour 1 cup plus 2 tablespoons warm kefir into the pan of your bread machine; add bread flour, sugar, salt, and yeast, respectively. Program the machine for the dough cycle; press Start.
  2. Punch down dough and remove from the pan. Knead lightly on a floured work surface. Divide dough into 12 pieces; roll each into a small ball.
  3. Grease a muffin tin. Place 1 ball of dough in each muffin cup. Cover loosely with plastic wrap. Let rise until dough is puffy, about 30 minutes.
  4. Preheat oven to 350 degrees F (175 degrees C).
  5. Bake rolls in the preheated oven until golden brown, about 20 minutes.
  6. I think brown sugar, molasses, or honey could be subbed just fine for the sugar.
  7. Roll dough into 36 small balls and place 3 in each muffin cup for clover-shaped rolls.

I made these using all purpose flour as that’s all I had and also used bread machine yeast and they turned out perfect! So nice to be eating ‘bread’ with the additional health benefits of the kefir! It did make 12 but I forgot to take a pic before we got into them). And I baked them in a 9×13 stone instead of muffin tins so they took about 10 mins longer to bake.

Made this today and really happy with the results. Did the recipe exactly as written. But I made a small loaf of bread and cinnamon rolls. Divided the dough evenly and used a small loaf pan (4″ X 8″) and a 8″ square pan. Both turned out great. A nice way to use extra kefir. I have been looking for ways to use my kefir that the whole family will eat.
