Every Easter, I look forward to baking hot cross buns because I adore them. Although I prefer to create the dough in a bread machine, you can also use a stand mixer.

Ingredients

  1. 3 cups all-purpose flour
  2. ¾ cup warm water (110 degrees F/45 degrees C)
  3. ¼ cup white sugar
  4. 1 large egg
  5. 1 large eggs, separated, divided
  6. 3 tablespoons butter, softened
  7. 1 tablespoon active dry yeast
  8. 1 tablespoon instant powdered milk
  9. ⅜ teaspoon salt
  10. ¾ cup dried currants
  11. 1 teaspoon ground cinnamon
  12. 2 tablespoons water
  13. ½ cup confectioners’ sugar
  14. 2 teaspoons milk
  15. ¼ teaspoon vanilla extract

Instructions

  1. Put flour, warm water, 1/4 cup white sugar, egg, egg white, butter, yeast, milk powder, and salt in a bread maker and start on dough program.
  2. When 5 minutes of kneading are left, add currants and cinnamon. Leave in the machine until doubled in size, about 1 hour.
  3. Punch down dough on a floured surface, cover, and let rest for 10 minutes.
  4. Shape into 12 balls and place in a greased 9×12-inch pan. Cover and let rise in a warm place until doubled, 35 to 40 minutes.
  5. Preheat the oven to 375 degrees F (190 degrees C).
  6. Mix egg yolk with 2 tablespoons water in a small bowl; brush on dough.
  7. Bake in the preheated oven until golden brown, about 20 minutes. Remove from pan immediately and cool on wire rack.
  8. Mix together confectioners’ sugar, milk, and vanilla until smooth. Place glaze in a piping bag or a sandwich bag with the corner snipped off; pipe a cross onto each roll.
  9. Combine warm water and yeast in the bowl of the mixer and let soften for about 5 minutes. Add flour, milk powder, 1/4 cup white sugar, egg, egg white, and salt. Mix, scraping the dough down occasionally, on low speed using the dough hook for 10 minutes. Add butter, currants, and cinnamon and mix for an additional 5 minutes. Transfer dough to a greased bowl, cover with plastic wrap and a kitchen towel, and allow it to rise until doubled, about 1 hour. Proceed with the recipe instructions.

I thought they needed more sugar at least 1/4 cup more. I did not like the cinnamon in them. I used raisins 3/4 cup and then 1/4 cup chopped dried apricots (those I loved in this).

Very good. I didn’t add cinnamon because the hot cross buns I remember from childhood didn’t have cinnamon. I added a teaspoon of vanilla just for flavor. I added the currants very early in the knead cycle and it turned out fine. Mine were ready after 16 minutes of baking. The family really enjoyed these and I’ll make them next Easter.

I made these today and we really enjoyed them. I did a mix of currants & dried cranberries (for 3/4 c total). I then split the cinnamon in 1/2 & replaced the other portion w cardamom. A real hit!

I used raisins instead of currents and substituted about half the flour for my fresh milled whole wheat. It’s a great recipe!

I made these in the stand mixer, and they turned out wonderful! I added 1/2 teaspoon ground cardamom and used raisins (couldn’t get currants in the store). I soaked the raisins in some rum and drained it off before adding to the dough. After kneading the dough in the mixer, I turned it out onto a floured surface, spread it out into a rough rectangle, and sprinkled on 1/3 of the raisins, folding the dough over in thirds. I repeated this process twice to incorporate all the raisins. I also used the traditional method of making a dough from flour, water and a little sugar and piped the crosses on before baking. I finished them off with a simple syrup glaze after baking.

Just finished, followed recipe except used raisins and dried cranberries in place of currents. It came out perfect, I used my KA mixer and dough hook instead of my bread machine. Only thing I will do differently next time is add cinnamon and fruit with everything else. Reason being it did not evenly distribute fruit being added so late. Wifey couldn’t wait to try them, but was very happy with the results.

This is an outstanding recipe and a stellar item for Easter (but a really tasty recipe for buns all year around). I made the recipe as indicated, using raisins instead of currants (I had both, but currants aren’t popular in my house). I missed the timing for adding the cinnamon and fruit (my fault and a learning for next time) but once I realized my error, I just pulled the dough out of the machine and kneaded these ingredients in and put it back in the machine to finish the first rise. This is one of my COVID19 recipes (my goal is one baking item a week, at least), and will be a favourite long after the pandemic is a memory (one can only hope!).

I’ve made these many times now, and every time they’ve been perfect. An absolute winner of a recipe. I sometimes add small chocolate chips to the fruit as a variation. They’re way better than anything I’ve ever bought in the stores.

Light and slightly sweet bread. Hubby said it reminded him of raisin bread. Had a little trouble finding the currants. Their smaller size made for a nicer blend in the dough & mixed well with the bread machine. Will definitely be making this one again….and not just for Easter.
