I experimented with a variety of components until I found the ideal mixture for my own recipe since I adore the onion sauce on hot dogs that you can buy from a pushcart. The flavor is exactly the same as the onions I frequently purchase from my favorite hot dog stand.

Ingredients

  1. 2 cups cake flour
  2. 2 teaspoons baking powder
  3. ½ teaspoon salt
  4. 2 eggs
  5. 1 cup white sugar
  6. ½ cup canola oil
  7. ½ cup buttermilk
  8. 2 tablespoons lemon juice
  9. 1 lemon, zested
  10. 1 cup grated zucchini
  11. 1 cup powdered sugar
  12. 2 tablespoons lemon juice
  13. 1 tablespoon milk

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×5-inch loaf pan.
  2. Mix flour, baking powder, and salt together in a medium bowl and set aside.
  3. Beat eggs in a large bowl. Add sugar and oil until well blended. Add buttermilk, lemon juice, and lemon zest and blend together. Fold in zucchini until it is mixed well. Add flour mixture and blend together until well combined. Pour batter into the prepared pan.
  4. Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, 40 to 45 minutes.
  5. While loaf is still warm, combine powdered sugar, lemon juice, and milk in a bowl for glaze and spoon over bread. Let glaze set up before cutting and serving.

This is good. I really like the glaze. It adds a nice flavor. The flavor of the bread really came out better the next day. It cooked nicely in 50 minutes.
