Ingredients

  1. 3 ⅔ cups all-purpose flour, divided
  2. 2 teaspoons baking powder
  3. ½ teaspoon salt
  4. 2 cups milk
  5. 3 large eggs
  6. ¼ cup white sugar
  7. 1 quart vegetable oil for frying, or as needed
  8. 2 tablespoons confectioners’ sugar, or as needed

Instructions

  1. Mix together 1/2 of the flour, baking powder, and salt in a medium bowl. Set aside.
  2. Beat together milk, eggs, and sugar in a large bowl. Add flour mixture and beat until smooth. Add remaining flour, using only enough to achieve a runny batter thin enough to flow through a funnel.
  3. Heat 1 inch oil in an 8-inch skillet to 375 degrees F (190 degrees C).
  4. Put your finger over the bottom opening of a funnel and fill with a generous 1/2 cup batter. Release batter close to the surface of hot oil while making a circular motion and fry until the bottom is golden brown, 1 to 2 minutes. Use tongs and a wide spatula to carefully turn cake over and fry until the other side is golden brown, about 1 minute more. Drain cake on a paper towel-lined plate and sprinkle with confectioners’ sugar. Repeat with remaining batter.

This batter is on-point! I didn’t need NEARLY the full amount of flour, so make sure you add slowly. I also like the ketchup bottle tip a LOT – I struggled with a funnel, I also think the tip of my funnel may have been a bit too narrow. Maybe look for one that’s closer to size of a marble or so.

I added 1/2 tsp vanilla and increased sugar to 1/3 cup instead of 1/4. It makes a lot. Half the batter is not in the fridge. I’ll see if I can use it up in the next couple days.

Make 4 servings instead of 12. Unless you are cooking for an event, nobody needs 12 funnel cakes. Really great with some fresh fruit

This recipe was meh. It produced way too much flour than needed. It is very bland!! I added about a tbs of vanilla to add flavor. Never using this recipe again.

First time making these, and not great the first try. I have it mastered now first by adding 1/2 cup sugar and a bit of vanilla to the batter. Thought I could take a short cut by frying these in my deep fryer since the oil was hot from another recipe, don’t do it! Follow directions and use the small 8″ fry pan with oil. After this, I tried again and perfection!
