Ingredients
- 2 ¾ cups all-purpose flour
- 1 tablespoon active dry yeast
- 1 teaspoon salt
- 1 teaspoon white sugar
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon dried basil
- 1 pinch ground black pepper
- 1 cup water
- 1 tablespoon vegetable oil
- 2 tablespoons olive oil
- 1 cup mozzarella
- 1 tablespoon grated Parmesan cheese
Instructions
- Combine flour, yeast, salt, sugar, garlic powder, oregano, thyme, basil, and black pepper in a large bowl. Add water and vegetable oil, then mix until dough comes together.

- Turn dough out onto a lightly floured surface and knead until smooth and elastic.

- Lightly oil a large bowl; place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place for 20 minutes.

- Preheat the oven to 450 degrees F (230 degrees C). Lightly grease a baking sheet.
- Punch dough down and place on prepared baking sheet. Pat into a 1/2 inch thick rectangle. Brush top with olive oil and sprinkle with mozzarella and Parmesan cheese.

- Bake in the preheated until golden brown, about 15 minutes.
- Cut into 12 pieces and serve warm.

This was the best recipe! I did not follow it to the letter, though, because I didn’t have mozarella. I used leftover Mexican 4-cheese (shredded) and I probably only had about a third of a cup. Also, I added plenty of paprika. It was incredible. Wasn’t sure what it was *supposed* to taste like since I never had it before, so I didn’t mind the density. Next time I may let it rise twice just to see the difference.

I love this recipe. I make it all the time at work and it goes over great!! I bump up the seasonings just a bit and I definitely proof the yeast with the water, sugar and salt before adding it to the dough. I let it rise for 20 minutes, punch it down and form it back into a ball before letting it rise another 20 minutes. I just put as much cheese on it as I feel like at the moment lol
Added olives and sprayed olive oil on the toppings before and after baking. Smells and tastes fantastic
loved it, I was using yeast so I knew to use warm (it should be in the instructions). I am not i Italian sooooo I do not know what real focaccia bread is…My family digs it. I love and even use it for pizza crust for “upside down pizza”

I love this recipe! So easy and good. I add extra herbs and garlic, and I also, put a few veggies on top. Sooo good, I’ve been using this recipe for years!
This is probably the worst recipe I have made. I followed the recipe to the tee (twice) and both times the dough was dense and did not rise. There is no way I cup of water is enough for 2 3/4 cup of flour. Also, the recipe does not mention that you should use warm water.
I am not Italian so I wasn’t sure if I made it right but it was sure good. We had it with barbeque meatballs.
This was really good. Much better than the commercial focaccia breads. I added fresh herbs from the garden (parsley, sage, rosemary and… basil) to the yeast during the final stages of my bread machine’s mixing cycle. I also used fresh garlic, rather than dried. I used the baked bread with another terrific recipe on this site, Grilled Mediterranean Vegetable Sandwich. Update: after a very long absence, I made this again. It’s still a favorite. However, I made a dumb mistake and baked the dough directly on parchment paper. It caused the bread to fuse with the paper! . Next time, I’ll follow the directions and bake it on a greased baking sheet.

Delicious herb bread but NOT a foccacia bread. I had my suspicions when the dough wasn’t a lovely wet mess. If you are wanting a traditional foccacia, skip this recipe or you’ll be disappointed.
The instructions and recipe were terrific. I have never made any kind of bread before and it turned out as it should. Instead of the olive topping, I used kosher salt, basil, oregano and onion powder. My family loved it.
the amount of water that is called for did not make my dough as sticky. if I would make again would hold back 1/2 cup of flour and use if needed.
I made this recipe exactly as shown, AND, another without the spices (just salt on top). I was making two different dishes, one was spicy, and I thought the plain focaccia would compliment that dish better. I couldn’t have been more pleased! It was so easy to make, and I got a lot of compliments. The only thing I did differently in the prep, was digging in with my fingers when shaping it, and sprinkling olive oil liberally on top, not brushing. I made them early in the afternoon, baked them, cooled on a wire rack, put a thin dishtowel over them, and then lightly reheated them before serving. Delicious!

Really fast and quite easy. This can serve as a foundation as once you get it to the baking pan stage your can play with it. I’ve used mixes of smoked cheeses, chopped fresh herbs and bacon bits. Maybe not that traditional but very delicious
This is a great bread to have with any Italian food. Or even just a bowl of simple marinara. I’ve served it with Spaghetti, Lasagna, and Scallops in a tomato-basil sauce. Went great with all. It’s quick, easy, and I used my rocker knife to slice it into bread strips. Or just tear a chunk off. One note, the first time you make it, watch it so the cheese on top doesn’t get too brown. Gonna be a regular for me!
