This is a simple yet delectable recipe for leftover eggnog after the holidays. Additionally, it’s a simple breakfast to prepare for holiday visitors.

Ingredients

  1. 2 cups all-purpose flour
  2. ½ cup white sugar
  3. 1 tablespoon baking powder
  4. 1 teaspoon nutmeg
  5. ½ teaspoon salt
  6. ½ cup walnuts, chopped (Optional)
  7. 1 cup eggnog
  8. ⅓ cup butter, melted
  9. ¼ cup rum
  10. 1 egg, beaten
  11. 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Line 12 muffin cups with paper liners or grease.
  2. Combine flour, sugar, baking powder, nutmeg, and salt in a large bowl; mix in walnuts.
  3. Combine eggnog, melted butter, rum, egg, and vanilla extract in a separate bowl; stir into flour mixture until just moistened, forming a lumpy batter.
  4. Pour batter into prepared muffin cups and bake in preheated oven until a toothpick inserted into the center comes out clean, about 15 minutes.
  5. I used walnuts for this recipe, but any variety of nuts can be used. Raisins (1/2 cup) can also be used.
  6. Substitute water for the rum, if desired.

I did it in a loaf pan. Cooked in at 350 degrees for 45 mins.

A great way to use up the eggnog at the end of the season. I just made a few minor changes: substituted one cup of the flour with whole wheat flour and added a teaspoon more of baking powder; used one small very ripe banana, because I had it, and added enough oil to make 1/3 cup; substituted pumpkin pie spice, because I had that and no nutmeg; used a little less sugar than called for. Then I made mini muffins so I could take them to work and share with the whole office. Everyone loved them!

On day 1, the taste was a little bland, but the next morning, the egg nog flavor really came through. Definitely a make-ahead, which makes it handy for the Xmas season.

Oh MY, what a good muffin for Christmas!!! The eggnog, rum and nutmeg tastes are very subtle but combine to make a delicious muffin, wowser. Wish I had some chopped pecans, could only make it better!
