Ingredients

  1. 1 ½ cups bread flour
  2. 1 ½ cups unbleached all-purpose flour
  3. 2 teaspoons salt
  4. 1 tablespoon white sugar
  5. 1 (.25 ounce) package instant yeast
  6. 1 ⅓ cups warm water (110 degrees F/45 degrees C)
  7. 3 tablespoons extra virgin olive oil, divided
  8. 2 tablespoons chopped fresh rosemary
  9. 2 tablespoons grated Parmesan cheese

Instructions

  1. Stir together both flours and salt in a large, stoneware bowl. Make a well in the center of the flour mixture; sprinkle sugar and yeast into the well. Carefully pour the water into the well. Let stand until the yeast begins to act, about 5 minutes.
  2. Pour 2 tablespoons oil into the well. Stir the center of the mixture with a wooden spoon, gradually widening the are you are stirring to incorporate all the flour.
  3. Turn dough out onto a floured surface, and knead just until smooth. Keep the dough soft.
  4. Pour 1/2 teaspoon oil into a clean bowl. Place the dough in the bowl, turning once to oil the top. Cover and let rise until doubled, 30 to 45 minutes.
  5. Grease a baking sheet with 1 teaspoon oil.
  6. Punch the dough down and transfer to the prepared baking sheet. Gently press dough out to a thickness of about 1/2 inch.
  7. Pour the remaining 1 1/2 teaspoons oil over the top of the dough. Use the handle end of a wooden spoon to dimple the dough at 1 1/2 inch intervals. Sprinkle with rosemary and Parmesan cheese. Place in a cold oven on the center shelf. Place a flat pan of hot water on the shelf below the bread. Let rise until doubled in size, 20 to 25 minutes.
  8. Turn the oven to 375 degrees F (190 degrees C). Bake the focaccia until browned on top, 20 to 25 minutes. Remove from the pan, and cool on a wire rack. Serve warm.

I’ve never made focaccia before so was looking for an easy recipe. This one’s title says it all! It was easy to make and made my house smell soooo good. As others have said it would make a good pizza crust. I also think it would be good using other herbs, but this time I followed the directions as written because I believe it isn’t fair to rate a recipe if you make any changes to the original.

I used all bread flour. Didn’t rise as much as would have liked but may be due to all bread flour. Wasn’t sure about leaving water pan in oven while cooking. Used times and temp as more of a suggestion definitely had to wait longer for proofing and cooking. Overall a bread “guide” recipe for feeling it out on your own! Made some homemade marinara to go with the bread… sooo good!

Though I’ve made bread many times, I’ve never attempted focaccia.. I have to say, this was the easiest and had the best flavor! My whole family (6 of us) loved it! I will definitely be making this many times over. I love that this recipe is so versatile.

For a homemade recipe this is the best we’ve had so far. Easy to make, fluffy on the inside and a slight crisp to the crust. I would play around with the topping next time to add more flavor. If I could I’d give it 4.5 stars.

I LOVE THIS!!! I used a stand mixer. Worked great. Also used active dry yeast rather than instant. Proofed for 10 minutes with the sugar. Also worked great. I’m gonna be making this a lot.

I did substitute 1 tbsp of honey for the sugar. I also flattened the rosemary with a rolling pin between parchment paper, stripped the rosemary and added it to the olive oil. I kept about a tbsp or two more of olive oil/rosemary mix to brush on the bread as it cooled on the rack.

Deliciously easy bread recipe! It comes out fluffy on the inside with a slightly salty, thin herbed crust. The only change I made was with the rosemary. I only had dried rosemary, so I mixed in about a tablespoon of water with the rosemary to re-hydrate it before sprinkling it over the dough. Even though rosemary is the traditional herb of choice for focaccia, basil, oregano, and parsley are a few herbs that would also work well. As a bonus, this bread works as a wonderful sandwich bread that has plenty of flavor in of itself. I will definitely make this again!
