Ingredients

  1. cooking spray
  2. 1 ¾ cups all-purpose flour
  3. ¾ cup white sugar
  4. ¾ cup milk
  5. ⅓ cup vegetable oil
  6. 1 egg
  7. 1 ½ teaspoons baking powder
  8. ½ teaspoon salt
  9. ½ teaspoon ground nutmeg
  10. ½ teaspoon ground cinnamon
  11. ¼ cup butter, melted, or more to taste
  12. ⅓ cup white sugar, or more to taste
  13. 1 tablespoon ground cinnamon, or more to taste
  14. 1 teaspoon ground nutmeg, or more to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray a mini muffin tin with cooking spray or line with paper cups.
  2. Place flour, sugar, milk, vegetable oil, egg, baking powder, salt, 1/2 teaspoon nutmeg, and 1/2 teaspoon ground cinnamon in a bowl. Mix dough by hand until well combined but some lumps remain. Fill muffin tin with dough.
  3. Bake in the preheated oven until tops spring back when lightly pressed, but color is not yet golden brown, about 15 minutes.
  4. Pour melted butter into a bowl. Mix 1/3 cup sugar, 1 tablespoon cinnamon, and 1 teaspoon nutmeg together in a separate bowl. Dip muffins in the butter coating; immediately roll in the cinnamon dusting.
  5. Add 5 minutes to baking time if you use regular muffin tins.
  6. Margarine may be substituted for butter.

I did change a few things. My husband is pre diabetic so I changed the sugars, I did not add the cinnamon & nutmeg to the batter, instead I added some vanilla extract, &. Then just dipped in butter & rolled in cinnamon sugar mixture. I think they were very good. The possibilities are limited by your imagination.

I have made these several times since I got the recipe. These are a winner for snack time instead of cookies at our shuffleboard games. Too good for us to make any changes. I do use a 2 Tablespoon cookie scoop that makes them all perfectly the same size. Yield: 20

Very yummy! One thing I found missing in many recipes is to be sure and flour your pans after greasing them. My puffs stuck to the pan but still tasted great. I used very old nutmeg. Does it always have a strong taste?

excellent quick little donuts.. made mine in mini tins.. so they are more like Tim-Bits.. very delicious and not deep fried for everyone’s benefit , might just do a little less cook time.. next go. But my first off was very good and should be a big hit with the Grand kids .
