My daughter’s favorite recipe and a version of an old family recipe. If you enjoy dating, be warned—these are addicting! For optimal results, use fresh whole dates.

Prep Time: 20 mins
Cook Time: 15 mins
Total Time: 35 mins
Servings: 10
Yield: 10 muffins

Ingredients

  1. 1 ½ cups all-purpose flour
  2. ¼ cup white sugar
  3. ¾ teaspoon baking powder
  4. ½ teaspoon salt
  5. ⅛ teaspoon baking soda
  6. ½ cup pitted and chopped dates
  7. 1 cup buttermilk, at room temperature
  8. 1 egg, at room temperature
  9. 2 tablespoons butter, melted

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Grease or line 10 cups of a muffin tin.
  2. Whisk flour, sugar, baking powder, salt, and baking soda together in a bowl. Add dates, separating the pieces as you drop them into the flour mixture. Mix to coat.
  3. Whisk buttermilk, egg, and butter together in a small bowl. Fold buttermilk mixture into flour mixture until just combined.
  4. Spoon batter into prepared muffin tin.
  5. Bake in the preheated oven until a toothpick inserted in the largest muffin comes out clean, about 15 minutes.

I am always looking for a quick muffin recipe and love dates, so, thought I would give this a try. My husband and I were not fans of this recipe. The muffin was very dense and tasted like a slightly chewy biscuit. It didn’t have the lighter muffin texture I am used to and had very little sweetness to it. I don’t believe I will be making these again.
