This simple fast bread is embellished with two types of raisins. This interesting bread was baked inside three coffee cans. It needs to be started the previous evening.

Ingredients
- 1 cup raisins
- 1 cup golden raisins
- 4 teaspoons baking soda
- 2 cups boiling water
- 4 cups all-purpose flour
- 2 cups sugar
- ½ teaspoon salt
- ¼ cup vegetable oil
Instructions
- Place the dark and golden raisins in a medium bowl. Dissolve baking soda in boiling water, and pour over raisins. Let stand overnight without stirring.
- Preheat the oven to 350 degrees F (175 degrees C). Grease three 1 pound sized coffee cans.
- In a large bowl, stir together the flour, sugar and salt. Stir in the raisins with their water, and the oil until well blended. Batter will be thick. Divide the batter evenly between the 3 cans.
- Bake for 1 hour in the preheated oven, or until a toothpick inserted into the crown comes out clean. Lay cans on their side to loosen the bread as it cools.

surprising I don’t like raisins but this recipe is oh so good. I only used 1 cup of raisins and added 1 cup of chocolate chips. And made in regular bread pans.
I love this bread!! Tho I have to make double batches cause the neighbors love it too!! I use dried cranberries instead of the golden raisins and everyone loves it even more!!!

i was initially going to rate this a 3 but the days after i made it it tasted way better. Very quick and quite tasty. I might make again but it was nothing spectacular.

This recipe I have known, made and enjoyed for many years. If you mix about a half the amount of the ingredients listed and use smaller cans(soup cans), you can make this on a camp fire. A tin foil cover helps. Don’t put the cans right on the coals. Hence Hobo bread!
I did this a little different… purely because i wanted something quick and easy… Did it with dark brown sugar (stil the full 400g) and just mixed it all together and bunged it on the oven… Tok about 45m… Not bad bread at all!
