Cinnamon Sugarloaf

With mashed potatoes and gravy, this pepper steak from the oven is delicious. A tasty cut of steak that is less expensive than highly pricey steaks is cube steak. Since the children adore this dish so much, they refer to it as “Mom’s famous cube steak.”

Ingredients

  1. 2 cups all-purpose flour
  2. 2 tablespoons ground cinnamon
  3. 2 teaspoons baking powder
  4. ½ teaspoon baking soda
  5. 1 cup wheat and barley nugget cereal (such as Grape-Nuts®)
  6. ¾ cup light whipping cream
  7. 3 eggs, beaten
  8. 1 cup white sugar
  9. 1 tablespoon maple sugar

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5x3-inch loaf pan.
  2. Whisk flour, cinnamon, baking powder, and baking soda together in bowl. Combine nugget cereal and light cream together in another bowl. Beat eggs in another bowl until light and frothy.
  3. Stir cereal mixture, white sugar, and eggs together in a large bowl. Add flour mixture to cereal mixture and stir to combine batter. Pour batter into prepared loaf pan and sprinkle maple sugar over the top.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 minutes. Run a knife along the sides of the pan to loosen the loaf; tap pan gently while tilting the pan to turn the loaf out onto a wire rack. Cool completely.

It isn’t cake-sweet, but a bit too sweet. The half & half gives a buttery flavor. This is a dense & on-the-dry-side loaf. I like panettone toasted, too – rather than “straight.” 🙂
