For a flavorful seafood and vegetable stir-fry, tender shrimp and crisp vegetables are stir-fried in a sauce with garlic and ginger flavoring created from Swanson® Chicken Stock, soy sauce, and sesame oil.

Ingredients

  1. 3 cups all-purpose flour
  2. 2 teaspoons ground cinnamon
  3. 1 teaspoon freshly grated nutmeg
  4. 1 teaspoon baking powder
  5. 1 teaspoon baking soda
  6. 1 teaspoon salt
  7. 3 eggs
  8. 2 cups white sugar
  9. 2 cups grated zucchini, lightly packed
  10. 1 cup melted coconut oil
  11. ¼ cup buttermilk
  12. 1 tablespoon vanilla extract
  13. 1 cup chopped pecans
  14. 18 maraschino cherries, chopped
  15. 2 tablespoons maraschino cherry juice

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease and flour 5 mini loaf pans.
  2. Combine flour, cinnamon, nutmeg, baking powder, baking soda, and salt in a bowl.
  3. Beat eggs in a separate, large bowl with an electric mixer. Add sugar, grated zucchini, coconut oil, buttermilk, and vanilla extract; beat until combined. Add flour mixture and blend until just combined. Fold in pecans, chopped cherries, and cherry juice. Transfer batter into the prepared loaf pans.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes.
  5. Vegetable or canola oil can be subbed for melted coconut oil, if desired.
  6. These can also be baked in two large loaf pans for about 50 min. I like mini loaf pans because they are easier to get done in the middle.

It is really good as is. I wanted more cherry flavour. I adjusted the recipe the second time to have more cherries 1 1/2 – 2 c and upped the cherry juice to 1/4 c. Added an extra tablespoon or two to make the batter stiffer.
