I made this delicious soup while following Phase 1 of the South Beach® diet. Very tasty and filling, and even better the next day!

Prep Time: 20 mins

Total Time: 45 mins
Servings: 18
Yield: 18 biscuits

Ingredients

  1. 2 ¼ cups all-purpose flour
  2. 1 tablespoon baking powder
  3. 1 teaspoon salt
  4. 1 teaspoon grill seasoning (such as McCormick® Grill Mates® Montreal Steak Seasoning)
  5. ¼ teaspoon baking soda
  6. ¾ cup cold, unsalted butter, shredded on a box grater
  7. 1 ¼ cups buttermilk
  8. ¾ cup shredded sharp Cheddar cheese
  9. ¼ cup minced green onion, white and green parts
  10. 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper and set aside.
  2. Whisk flour, baking powder, salt, steak seasoning, and baking soda together in a large bowl. Add shredded butter and blend with your fingertips until the mixture is crumbly.
  3. Gradually pour buttermilk into the bowl, stirring with a stiff rubber spatula until you have a soft, moist dough that holds together. Fold in Cheddar cheese and scallions quickly, mixing just until all of the flour is incorporated.
  4. Drop biscuit dough onto a large baking pan using a two-tablespoon cookie scoop, spacing them 3 to a row. Gently brush tops of biscuits with melted butter.
  5. Bake until biscuits are cooked through and golden brown on the outside and nicely risen, 17 to 22 minutes. Let cool on the pan for about 5 minutes, and serve warm.

Substituted dry chives for green onions the last time I made this. I didn’t really notice the difference but my wife liked them a lot better. Just like at Red Lobster.

I make these for my catering business…people love them!

Turned out a little more buttery than I would have like, although everyone else enjoyed them, and that’s what matters

Every time I make it had turned out fantastically I do my own variations but the base is awesome

These biscuits are extremely yummy. I had to improvise with the seasoning but the family loved these and will definitely make again.

Wonderful recipe. We devoured them for breakfast.

My family and I thought the biscuits were way to salty. I will make this recipe again but eliminating the Montreal Steak. I will add some Mrs. Dash and some garlic as a replacement.

Made as is several times. Excellent. Goes really good with homemade clam chowder or chicken soup.

Taste great while warm, a little dry when room temp

These biscuits are amazingly delicious! They’re slightly crispy on the outside and very tender on the inside. I served them alongside meatloaf and mashed potatoes. They were a hit with my family and I’ll be making them again and again!
