Ingredients
- 2 cups quick-cooking oats
- 2 cups buttermilk
- 2 eggs, beaten
- 1 cup packed brown sugar
- ½ cup butter, melted
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
Instructions
- Mix oats and buttermilk in a large bowl; allow to rest for 15 minutes.
- Preheat the oven to 400 degrees F (200 degrees C). Grease 24 muffin cups or line with paper liners.
- Combine eggs, brown sugar, and butter in a small bowl; stir into oat mixture. Mix flour, baking powder, baking soda, cinnamon, and salt in another bowl; stir into oat mixture until just moistened. Fill prepared muffin cups about 3/4 full.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 15 to 18 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

These are very good. I used brown coconut sugar, whole wheat pastry flour and, what I was a little worried about: rolled oats bc I didn’t have quick oats. They turned out fine. Like others, I added some vanilla and a cup of blueberries. This recipe made 16 what to me are standard size muffins.
Family loved them. Very moist. I added choc chips to some and grandson loved.
I’ve been making these (minus the cinnamon) for decades, the recipe was originally from an old Rodale cookbook. All of my kids grew up on these. I’ve taken them to many potlucks and such, where they are always very well received, disappearing quickly and getting me lots of requests for the recipe. They’re great as is, but they also make a wonderful base for almost any addition that you could think to add. Diced apple (with cinnamon); raisins; banana; chocolate chips; blueberries or other berries; diced peaches- these are just some of the additions that I’ve made to these over the years, and all were successful. They’re also especially delicious with a little streusel in the middle of the muffin and on top.
Hearty and moist, Sprinkled a bit of cinnamon sugar mixture on top . Made 24 mini’s and 12 regular size. Loved them!
These came out moist and delicious. I increased the cinnamon because that’s what we like. I also added chocolate chips to half the recipe just for fun. The taste is mild so add-ins would work fine.
I really liked this recipe. I can see where some people felt it needed more. It wouldn’t be amiss to add more cinnamon. I added some chocolate chips to one batch and raspberries to another, so it makes a great base. Plain, they taste like an oatmeal cookie. Overall a pretty good recipe.

Delicious recipe. Great for getting rid of sour milk. I typically cut about half of the butter with equal parts applesauce. I do the same with the brown sugar, replacing with stevia for baking. I also like to 50/50 the white flour with wheat. I’ve also replaced the egg with flaxseed flour and water. I’m sure the recipe as written is THE BEST, but the healthy version is pretty good too.
These are great, 5 stars with some added ingredients. I add 1 tsp of almond extract and then add different fillers – chocolate chips in some, strawberry jam in the middle of others, and blueberries in the rest. I have 3 picky kids and I love recipes that make them all happy. They love these!
I added a little vanilla and cinnamon for more depth of flavor and also used one cup of whole wheat flour. Nice and moist muffins! They keep well too in an airtight container.
I’m making this recipe with only a couple additions. I like to add white chocolate chips to it.
Muffins turned out beautifully. In future I will as more cinnamon and also add some ginger and nutmeg. Delicious.
III substitutes 8 ounces of unsweetened applesauce because our granddaughter is allergic to eggs. It is fantastic. I have made them 3 times!
I did the recipe for 12 muffins….If I had known how good they are, I would have made 24! On a recipe for 12, I added 1/4 cup raisins, 1/4 cup dates and 1/3 cup of pecan…..The BEST
I use this recipe often. I use 1 1/2 cups whole wheat four in place of 2 cups whit flour. I also sometimes add some chocolate chips if I want a sweet variation.
It’s a good starter recipe like others have said. Good for breakfast. I added dried cranberries and 2 teaspoons of vanilla extract – but still bland. I think next time I make it I will add a teaspoon of orange extract – it needs a little “zip” to it.
I used old fashioned oats and let them soak in the buttermilk while I prepared the other ingredients and added an extra 1/4 cup of buttermilk to this mixture. I used 1 C of whole wheat flour and 1 C of regular flour, added some vanilla (just eyeballed it), 1 tsp of cinnamon, and a cup or so of walnuts. I ended up with 30 muffins. This is a great base recipe that is good as is or you can add in what you like!

These are delicious and easy to make! Took about 1 hr from start to finish. My daycare kids love them and so do I, especially warmed and served with a glass of cold milk. Hearty, healthy, and a bit chewy from the oats. I made 48 mini muffins and 8 regular muffins. I’ve made these several times and prefer to spray the pans, because the muffins tend to crumble a little after pulling off a paper liner. Whole wheat flour is great in these too!
These were great! Based on the other reviews of needing a little something extra I did add an extra 1/4 cup brown sugar and and extra 1/4 teaspoon of salt and they came out beautifully! I’ll definitely be adding this one to my fave list. Thanks for the recipe.
Added a few frozen blueberries- also put them in mini-muffin pans and made 72!! Perfectly delicious with morning coffee!
