Ingredients

  1. 1 ¼ cups gluten-free oat flour (such as Bob’s Red Mill®)
  2. ½ cup potato starch
  3. ⅓ cup cornstarch
  4. ⅓ cup tapioca flour
  5. 2 tablespoons xanthan gum
  6. 1 tablespoon active dry yeast
  7. 1 teaspoon white sugar
  8. 1 teaspoon salt
  9. 1 cup warm milk
  10. 1 egg
  11. ¼ cup olive oil
  12. 1 teaspoon apple cider vinegar

Instructions

  1. Combine oat flour, potato starch, cornstarch, tapioca flour, xanthan gum, yeast, sugar, and salt in the bowl of a stand mixer; whisk until well mixed, about 1 minute.
  2. Whisk milk, egg, olive oil, and vinegar together in a separate bowl until well combined, about 1 minute. Stir milk mixture in gradually to flour mixture on low speed; mix until a soft dough comes together, about 5 minutes.
  3. Line 2 baking sheets with parchment paper. Divide dough into 6 equal pieces; roll each piece on a floured surface to a 6-inch circle. Place on the prepared baking sheets; cover with plastic wrap and set aside for 1 to 1 1/2 hours.
  4. Preheat the oven to 450 degrees F (230 degrees C). Heat a pizza stone in the oven.
  5. Spray pita breads with water and place them straight on the hot pizza stone.
  6. Bake in the preheated oven until puffed and lightly golden, 5 to 7 minutes.

I have made this numerous times for gyros, enchiladas, and pizza. It’s very good. I just roll thinner for enchiladas and thicker for pizza.

Best gluten free pita bread recipe!!! I really wish I had found this recipe sooner. I was honestly skeptical since all other recipes had failed me but this came out beautifully. I followed it exactly as written, they puffed up, and are fluffy. They taste just like regular pita bread. I gave one to my husband secretly with some hummus (he’s not gluten free and is always skeptical when I make gluten free items) and he loved it as well. His eyes bugged out and couldn’t believe it was gluten free! I’m super excited to eat these with my homemade hummus. Thank you sooooo much!

This was a great recipe, we where wanting to make Gyros and I didn’t know what I would use for mine. This hit the spot, also going to modify it a bit with some spices and use for a pizza crust. This is probably the best dough recipe I have found to date. Thank You

I made this for a gluten-free friend, having spent the weekend before making several batches of regular pita bread for a falafel feast. While it does not fully puff up while baking (so you will not be able to reliably have a “pocket” to stuff fillings in), the flavor and texture are excellent. It will easily fold in half around whatever fillings you choose. It is super easy to mix up and roll out, making 6 generous pitas.
