Sunny’s Brunchy Bread Pudding

Ingredients

  1. 1 tablespoon olive oil
  2. 4 links chicken sausage
  3. 1 cup heavy cream
  4. 1/2 cup whole-fat Greek yogurt
  5. 2 large eggs
  6. Zest and juice of 1 orange
  7. 3 tablespoons cinnamon sugar
  8. 2 tablespoons unsalted butter
  9. 6 slices bread, toasted and cut on the diagonal
  10. 1/2 cup maple syrup
  11. 1/2 teaspoon fennel seeds

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Add the olive oil and sausages to a large pan on medium-high heat. Cook, turning sausages occasionally, until cooked through, about 10 minutes. Remove to a paper towel-lined plate. Cool until cool enough to handle, then chop. Set aside.
  3. Add the heavy cream, yogurt, eggs, orange zest and 2 tablespoons cinnamon sugar to a large bowl. Stir until everything is combined.
  4. Butter the bottom and sides of an 8-inch square baking dish. Spread the chicken sausage in the bottom of the dish. Shingle the toast on top, overlapping each other slightly, then pour the custard over. Sprinkle the top with the remaining tablespoon cinnamon sugar. Bake, covering with foil halfway through, until golden and bubbly, 30 to 40 minutes.
  5. Meanwhile, combine the orange juice, maple syrup and fennel seeds in a small pot on medium heat. Cook until reduced back down to a syrup consistency, 10 to 15 minutes. Strain out the fennel seeds and serve with the bread pudding.

I love Sunny’s recipes and ideas but would you please do us all a favor and turn her microphone down about 80%.  It will save us all hearing loss and headaches.

I usually love all of Sunny’s recipes but this one was a bit disappointing. I followed all of the directions but it was soggy on the bottom and too crunchy on top. The flavor in the syrup is delicious!
