Office Doughnut Bread Pudding

Ingredients

  1. 1 quart heavy cream
  2. 2 cups milk
  3. 1 cup sugar
  4. 1 tablespoon vanilla extract
  5. Pinch salt
  6. 4 whole eggs plus 7 yolks
  7. 8 stale doughnuts, flavor of your choosing
  8. Butter, for greasing the ramekins
  9. Frozen Berry Goo, recipe follows
  10. One 10-ounce bag frozen mixed berries, thawed
  11. 1/2 cup cranberry juice
  12. 1/4 cup sugar
  13. 2 tablespoons cornstarch
  14. 2 teaspoons almond extract
  15. 1 teaspoon ground cinnamon
  16. Pinch salt

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Combine the heavy cream, milk, sugar, vanilla, salt, eggs and egg yolks in a large bowl. Whisk to combine.
  3. Cut doughnuts into quarters, then soak in the mixture for 15 minutes.
  4. Grease six 6-inch ramekins with butter. Divide the filling among the ramekins, then place the ramekins in a 9-by-13-inch pan with warm water coming halfway up the sides of the ramekins. Cover with foil, then bake for 1 hour. Remove foil and bake uncovered for 15 more minutes. Serve with Frozen Berry Goo.
  5. Combine berries, juice, sugar, cornstarch, almond extract, cinnamon and salt in a saucepan over medium heat and cook until the berries break down and it becomes a drizzleable sauce, about 10 minutes.
